How To make Title: Blueberry Buttermilk Muffins
Servings: 24
2 1/2 c flour
1 1/2 t baking powder
1/2 t soda
3/4 c sugar
1/4 t salt
2 egg
1 c buttermilk
4 oz butter
1 1/2 c blueberry
Sift dry ingredients together in a large bowl. In another bowl, whisk eggs, buttermilk and butter that has been melted and browned slightly. Make a well in dry ingredients and pour in liquid ingredients, mixing quickly. Fold in blueberries. Spoon batter into greased muffin cups and bake until golden brown at 400 degrees F for 20 -30 minutes.

3/4 cup melted butter
1 cup sugar
2 beaten eggs
2 teaspoons baking powder
1 cup fresh or frozen blueberries (no need to thaw if frozen)
1/2 cup blueberry pie filling
2 cups plus one tablespoon flour
1/2 cup milk
Heat oven to 375 degrees. Line muffin tins with papers. Melt butter. Mix in the sugar. Add beaten eggs and baking powder, mix thoroughly.
Put one tablespoon of flour in a plastic bag with the cup of fresh or frozen blueberries. Shake it gently to coat the blueberries, and leave them in the bag for now.
Add half the remaining two cups flour to your bowl and mix it in with half the milk. Then add the rest of the flour and milk and mix thoroughly.
Stir in the blueberry pie filling. Stir in coated blueberries. Fill the muffin tins three-quarters full and bake in 375 degree oven for 25-30 minutes. Makes 17 muffins.
Freeze left over pie filling in half cup servings using small zipper bags for future batches.
Just this morning mother said to me, these are the best blueberry muffins I have ever eaten. So there. :)

Best Blueberry Muffins Recipe! How to Make the Best Blueberry Muffins Ever!
I know the title may come off as cocky, but I am not being partial when I tell you that these are the best blueberry muffins ever made!To be fair, this recipe was adapted from someone elses recipe, so technically I'm only half partial lol. I've been using this recipe for years and there is just no need to rewrite an entirely perfect recipe! You know what they say, If it ain''t broke, don't fix it!! I changed a few small details from the original recipe but other than that these are incredible. These blueberry muffins are incredibly fluffy yet moist and decadent! Blueberry muffins sound so boring but these are just the opposite. You will feel like a pro baker after taking one bite of these babies I promise!

Best Blueberry Muffins Recipe
*Makes 12 Muffins, Double the Recipe for 24 Muffins
| Ingredients |
1 ½ Cups All Purpose Flour
2 Teaspoons Baking Powder
½ Teaspoon Salt
1 Cup Granulated Sugar
1/3 Cup Vegetable Oil
1 Egg
About 1/3 Cup Buttermilk
1 Teaspoon Vanilla
1 Cup Fresh Blueberries
Streusel Topping:
2/3 Cup Flour
4 Tablespoons Brown Sugar
¼ Teaspoon Cinnamon
¼ Teaspoon Baking Powder
4 Tablespoons Butter, Melted
| Instructions |
Preheat oven to 400 degrees F. Line muffin tins with muffin liners.
Place vegetable oil into a 1 cup measuring cup, add the egg, and enough buttermilk to fill to the 1 cup mark. Add vanilla and combine.
In a standing mixer, mix sugar and the buttermilk mixture until fully combined.
In a separate bowl, combine flour, baking powder, and salt.
Add flour mixture to the wet ingredients and mix until just combined. Do not over mix!
Fold in fresh blueberries gently.
Fill each muffin liner ¾ of the way. Top with streusel topping.
Bake at 400 Degrees F for 20 -25 minutes or until a toothpick inserted in the center comes out clean.
To make streusel topping:
Combine flour, brown sugar, baking powder, cinnamon, and salt in a small bowl. Stir in melted butter until a crumble forms.
