World's Best Bran Muffins is not a title to be taken lightly. Once you taste these, you'll call them by no other name! You will want to eat them for breakfast, lunch and dinner!
These tasty little baked goods are inspired by a childhood favorite. We would often have them with dinner, and leftovers would be our breakfast the next day. Seems strange, I know, to have muffins for dinner, but as kids it was the best thing ever. Still is. Try it.

6 Week Refrigerator Bran Muffin Mix
Today on Christines CooknChat we are making a Bran Muffin Mix that will keep in your fridge for up to 6 weeks !
Bring your kids along for a wee lesson from a lettuce while a yummy batch of muffins is baking!

Pandemic Bran Muffins
6 cups Bran Flakes / Raisin Bran
Add 2 cups boiling water & let stand for 5 mins
Almost 4 cups milk
Add in 4 Tbsp vinegar & let stand for a few mins until curdled on top....Voila...
I litre of Buttermilk !
In another bowl measure out 5 cups flour
2 Tbsp B. Soda
2 Tbsp B .Powder
1 tsp salt.
Stir to MeetnGreet. Set aside.
In lge bowl
Cream together:
1 1/2c brown sugar
1 1/2 c white sugar
1 cup butter
Add 4 eggs one at a time
Add 1/4 c molasses.Mix.
Add cereal mixture. Mix.
Carefully add buttermilk.
Add flour mix & fold in by hand.
Add 1 1/2 extra raisins or dates if desired ....or chopped apples, pears from your freezer !
Spray muffin pan & using ice cream scoop fill cases to 2/3 full.
Bake for 20 mins...less if using mini muffin tin.
Put remainder of muffin batter in a 4 quart container & hide in the fridge ????...batter will keep for up to 6 weeks or at least until lockdown is over !

Bran Cereal Muffins
2 3/4 cup Bran cereal, crushed
1/2 cup Raisins
1/2 cup Unbleached white flour
1 cup Whole-wheat flour
2/3 cup Sugar
1 tbsp. Baking powder
1 cup Coconut milk
2/3 cup oil
2 tsp. Ground flaxseed
1 tsp. Coriander
1/2 cup Applesauce or banana
1 cup Water
1/2 cup walnuts, opt
Directions:
Preheat oven to 350º F. Combine flour, raisins, sugar, baking powder, flax and coriander. Mix well. Add milk,
oil and water together. Pour this into the dry mix and stir thoroughly until moistened. Fill muffin cups 2/3. Bake
18 to 22 minutes. Cool for a few minutes, serve warm.

INGREDIENTS
- 1 cup wheat bran
- 1 cup boiling water
- 1/2 cup softened butter (my mom always used Crisco)
- 1 1/4 cup sugar
- 2 eggs
- 2 1/2 cup flour
- 2 1/2 tsp baking soda
- 2 cups bran cereal
2 cup buttermilk
DIRECTIONS
1. Pour boiling water over wheat bran and set aside.
2. Whip butter and sugar in mixing bowl. Add the remaining ingredients and mix slowly to incorporate.
3. Mix in the bran/water mixture until combined.
4. Bake in preheated 400 degree oven for 12-15 minutes, until golden brown.
5. The batter keeps in the refrigerated for 7-10 days. The muffins freeze well.

Making bran muffins with my muffin ???? | LEICHTNING HEALTH
Okay - so maybe the title is a little misleading - I wouldn't say this is my HEALTHIEST vlog, but it IS the tastiest yet!
Here's the thing, I'm a big fan of not baking very often, but enjoying it when you do. Join Jared and me baking bran muffins and try the recipe for yourself! I tweaked the recipe from this video, but I'll also post the recipe below!
Recipe:
1½ cups 100% all bran cereal
1 cup buttermilk
1/3 cup coconut oil melted
1 large egg
2/3 cup honey
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Mix the bran and buttermilk together and let sit for 10 minutes. Then stir in the rest of the ingredients.
Bake at 450 degrees for 5 minutes, then lower to 350 (without opening the oven door) for 10 minutes.
VOILA!
