Corn Muffins Made Healthy! An Easy, Delicious Recipe!
Try this easy, healthy Corn Muffin recipe! They are sweet, moist and especially delicious warm with butter! These muffins are made with just a few ingredients. RECIPE: Corn Muffins
INGREDIENTS:
1 cup cornmeal, yellow
1 cup white whole wheat flour (lightly packed)
2 tablespoons flax meal
4 teaspoons baking powder
1 teaspoon Kosher salt
1 13.5 ounce can coconut milk, unsweetened
3 - 4 tablespoons honey
Cooking spray
INSTRUCTIONS:
1: Preheat oven to 350 degrees. Spray a muffin pan with cooking spray.
2: In a large bowl, mix together the cornmeal, white whole wheat flour, flax meal, baking powder and salt.
3: In another bowl whisk together the coconut milk and honey.
4: Add the wet ingredients to the dry ingredients. Stir together until all the ingredients are moistened. Do not over mix.
5: Fill the muffin cups with the batter.
6: Bake for 30 minutes or until golden brown.
7: Allow the muffins to cool about 5 minutes before taking them out of the pan. Transfer to a wire rack to continue to cool
8: Serve warm. They are delicious plain and also with butter and honey.
NOTES:
Flax meal is ground flaxseeds.
You can use another type of salt if you don’t have Kosher salt.
To make measuring easier, if you are going to use 4 tablespoons of honey that equals 1/4 cup.
For bigger muffins, fill 9 of the muffin cups instead of 12.

Sweet Cornbread Muffins with Honey Butter | Thanksgiving Side Recipe
Hello everyone! Welcome to my channel! Today's recipe is super simple, light and fluffy cornbread muffins with honey butter.
Ingredients:
Muffins:
1 cup cornmeal
1 cup flour
1/3 cup granulated sugar
1/2 tsp salt
4 tsp baking powder
1 egg
1 cup milk (I used evaporated milk)
1/4 cup canola oil (corn or vegetable oils are fine too)
Honey Butter:
4 tbsp softened butter
1 tbsp honey
pinch of salt
- Combine all ingredients to make the honey butter
Instructions
- Preheat oven to 400 degrees.
- Add cornmeal, flour, sugar, salt, and baking powder to a large bowl and whisk to break up any clumps.
- Combine egg, milk, and oil in a medium bowl and whisk to combine.
- Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
- Pour batter into a greased muffin tin, filling each cup about halfway. Bake for 13-15 minutes or until toothpick inserted in the center comes out clean. Don't overbake!
- Serve warm with the honey butter!

Today I’m going to show you how to make a special Korean-style cornbread that I used to have when I was a kid in elementary school in Korea. The school provided this daily snack to the students just before class was dismissed. We looked forward to it every day, so I have fond childhood memories of cornbread, and of the anticipation of waiting for snack time at school!...

1 egg
2 tsp butter
1 1/2 milk
2 sugar
2 cups of butter milk corn mill
350 over on bake time 20-25 mins
Mexican Cornbread Muffins
Mexican Cornbread Muffins
1 cup Yellow Cornmeal
3/4 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Buttermilk
2 eggs
1/4 cup vegetable Oil or Corn Oil
1 small can (8 ounces) Creamed Corn
1 small Onion, chopped
1 to 2 tablespoons Jalapenos, chopped, picked or fresh
8-ounces Shredded Cheddar Cheese
Mix first 3 dry ingredients together then add the rest and stir together. Spray a muffin tip with non-stick cooking spray and fill each cup with 1/4 cup worth batter. Bake at 400 degrees F for 22 to 25 minutes until golden brown. Let cool a couple of minutes then turn out onto a wire rack to finish cooling a bit. Good while they are still warm or room temp. Enjoy with your favorite pot of beans, soup, chili or simply with a glass of sweet tea.
