Maple Mustard Glazed Chicken Breast | Cooking for One | Breville Toaster Oven
Cooking for one need not be boring, bland or monotonous. If you find yourself in need of a delicious dinner, this perfect meal can be prepared all on one pan, in the small confines of a toaster oven. Suited perfectly for a single portion, this dinner can be put together with a minimum of effort for maximum flavor. Of course, this meal can be scaled up for an entire family. However many people you need to feed, be it just yourself, or a whole battalion of hungry eaters, this maple-mustard glazed chicken and it’s accompanying roasted sweet potato planks are sure to please.

Maple-Mustard Glazed Chicken Breast for One
½ pound, 225g, chicken breast, trimmed
1 generous tablespoon, 27g, Dijon mustard
1 tablespoon, 15ml, pure maple syrup
1 teaspoon, 11g, whole grain mustard
½ tablespoon, 13g, packed brown sugar
½ teaspoon thyme leaves
kosher salt and fresh cracked black pepper, to taste
Preheat the toaster oven to 350°F, 180°C. Line a baking sheet with non-stick aluminum foil; spray the foil with non-stick cooking spray. Place cleaned and trimmed breast, rib side down on the baking sheet. Season breast with salt and pepper. Whisk all the glaze ingredients together and brush half on the breast. Roast for 25 minutes. Brush the remaining glaze on the breast and roast for an additional 20-25 minutes. Remove from the heat and let rest while you prepare the salad.
Dijon Vinaigrette
1 large egg yolk
2-3 cloves garlic, finely minced
1 tablespoon Dijon mustard
1 tablespoon white wine or champagne vinegar
¼ teaspoon finely ground salt
¼ teaspoon white pepper
½ - ¾ cup canola oil
Mix the egg, garlic, mustard, vinegar, salt and pepper in a bowl. Slowly pour in the oil, whisking to emulsify. Thin with water or chicken broth if desired.

Maple Dijon Chicken
Recipe:
4 Skinless, boneless chicken breast halves, 6 oz. each
¼ Teaspoon salt
¼ Teaspoon black pepper
2 Tablespoons olive oil
2 Tablespoons chopped shallot
6 Tablespoons maple syrup
1/4 Cup Dijon mustard
1 Tablespoon water
1 Teaspoon dry dill
1 Teaspoon grated fresh orange zest
1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap;
pound each to 1/4-inch thickness using a meat mallet or small heavy skillet.
Sprinkle chicken evenly with salt and pepper. Heat a large nonstick skillet over
medium-high heat. Coat pan with Olive oil. Add chicken to pan; cook 4 minutes
on each side or until done. Remove chicken from pan.
2. Reduce heat to medium. Add onion to pan; cook 1 minute. Add syrup and
remaining ingredients; cook 1 minute or until thoroughly heated, stirring
frequently. Serve sauce with chicken.

Maple Dijon Chicken Recipe // This is the easiest dinner recipe of all time! Maple Dijon Chicken is a super easy and delicious meal. You can feed a crowd and everyone will be so impressed with the flavors.
Here’s the full Maple Dijon Chicken recipe:
Ingredients:
2 lbs split chicken breasts
1 tbsp olive oil
½ cup maple syrup
½ cup dijon mustard
½ cup water
2 cloves garlic, minced
2 tsp dried rosemary
Instructions:
In a large pan, heat the olive oil over medium high heat.
Once the pan is hot, carefully place the chicken breast in the pan to brown.
When the chicken breast is golden brown, turn it over so that the chicken breast can brown on the other side.
If needed, remove the golden brown chicken breast from the pan, and repeat steps 2 and 3 till all the chicken breasts are browned.
Meanwhile, in a small bowl or measuring cup, mix together the maple syrup, dijon mustard, water and garlic till well combined.
Once the chicken breasts are browned on both sides, return all chicken breasts to the pan and carefully pour in the sauce.
Allow the sauce to simmer on medium heat for approx. 5 mins till the sauce has thickened slightly and the chicken is cooked through.
Sprinkle over the dried rosemary and stir into the sauce. Serve with rice, potatoes and/or your favorite vegetables.
Store in an airtight container for up to 1 week.
