Cold Peanut Noodle Salad with the Best Spicy Peanut Sauce EVER
This cold peanut noodle salad with spicy peanut sauce is one of the most popular recipes from my first cookbook and a major winner with my own family as an easy weeknight dinner.
The spicy peanut sauce in this recipe is so good that it would make even a cardboard box taste delicious :) The recipe below is for a cold ramen salad but you could also use this as a thai peanut sauce for chicken satay, spring rolls or even as a veggie dip.
Recipe: Cold peanut noodle salad with the best spicy peanut sauce ever:
Serves 4

Spicy Peanut Sauce:
½ cup plain natural peanut butter
¼ cup very hot water
¼ cup fresh lime juice
2 tablespoons soy sauce
2 teaspoons honey
1 to 2 teaspoons hot sauce
½ teaspoon dried ginger
¼ teaspoon garlic powder
Noodles and Toppings:
3 - 4 packages ramen noodles
1 cup frozen shelled edamame
2 cups sliced cooked chicken or 450g firm tofu, cubed (optional)
1 cup thinly sliced red cabbage
¼ cup salted roasted peanuts
2 green onions, thinly sliced
Lime wedges (optional)
To make the Spicy Peanut Sauce, combine the peanut butter, hot water, lime juice, soy sauce, honey, hot sauce, ginger and garlic powder in a small blender and purée until smooth.
Alternatively, you can whisk it like crazy until emulsified. If it’s too thick, add 1 to 2 tablespoons of hot water.
Cook the ramen (discard the seasoning packets) in a large pot of salted boiling water until just tender.
One minute before the noodles are cooked, stir in the edamame.
Drain the whole pot and rinse both the noodles and the edamame with lots of cold running water.
Combine the cooled noodles and edamame with chicken/tofu, cabbage and three- quarters of the Spicy Peanut Sauce.
Toss very well, adding the remaining peanut sauce if you like the dish saucier.
Divide among 4 bowls and top with peanuts and green onions. Serve with lime wedges.
Make it ahead: The Spicy Peanut Sauce lasts well in the fridge for up to 5 days.

INGREDIENTS
1 Tbsp (15 ml) cooking oil
2 to 3 cloves garlic (minced)
1 tsp fresh ginger paste
the whites of 2 scallions
2 Tbsp (13.5 g) Sambal Olek chile paste
1/2 cup (150 g) peanut butter
1 Tbsp (15 ml) soy sauce
1 Tbsp (12.5 g) sugar
3/4 cup (177 ml) coconut milk
1 to 3 Tbsp (15 to 45 ml) fresh-squeezed lime juice
salt to taste
9 oz to 12 oz (255 to 340 g) pasta or egg noodles
garnish with scallion greens and crushed peanuts

Chilled Sesame Noodles
Ingredients
1 tablespoon neutral-flavored oil
12 ounces thin flour “yangchun noodles”, Chinese egg noodles, or other thin egg noodle
1/2 cup Chinese sesame paste
1 block furu (fermented tofu), from 13-ounce jar
4 1/2 tablespoons toasted sesame oil
1/4 cup light soy sauce
3 tablespoons sugar
2 1/2 tablespoons Chinese black vinegar
1/2 tablespoon dark soy sauce
1/2 tablespoon Sichuan peppercorn oil
1/2 tablespoon salt
1 tablespoon mayonnaise, preferably Kewpie
1/4 cup water (about)
Sliced scallions, for serving
Chile oil, for serving
Toasted sesame seeds, coarsely ground using a mortar and pestle, for serving
1. In a small skillet, heat the oil just until it begins to shimmer. Transfer to a medium bowl and let cool. Cook the noodles according to the package directions. Drain and toss with the oil in the medium bowl or on a small rimmed baking sheet. Cover and refrigerate until cold.
2. In a small bowl, whisk the sesame paste and furu until smooth. Add the sesame oil, light soy sauce, sugar, black vinegar, dark soy sauce, Sichuan peppercorn oil, and salt and whisk until smooth. Whisk in the mayonnaise and then whisk in enough of the water until a thin creamy, silky sauce forms.
3. Divide the noodles among bowls; drizzle the sesame sauce on top. Garnish with the scallions, chile oil, and sesame seeds.
