How To make Cold& Spicy Noodles
Stephen Ceideburg 1/3 c Finely chopped cilantro
2 tb Tahini
2 tb Miso
1 t Dark sesame oil
3 tb Orange juice
1/2 ts Red pepper flakes
2 Green onions, finely chopped
1/2 Red bell pepper, minced
4 c Cooked udon or soba noodles
-drained, rinsed and drained -again
This can be prepared a day ahead. The bit of tahini (sesame paste) creates a creamy sauce that contrasts well with the crisp vegetables. In a large bowl, combine cilantro, tahini, miso, oil, orange juice, and red pepper flakes. Toss in green onions, bell pepper and noodles. Main Ingredients
* Buckwheat Noodles for NaengMyun
* Some Cooked Beef (2 Pieces for each Serving)
* Some Hard Boiled Eggs (Half Piece for Each Serving)
* 1 Asian Pear (3 Slices for Each Serving)
* Some Pickled Radish
* Some Pickled Cucumber (4 Pieces for Each Serving)
Sauce Ingredients
* ½ Asian Pear
* ¼ Onion
* 6 Garlic Cloves
* 1 Green Onion
* 1 Hot Pepper
* ⅓ Cup Red Pepper Powder
* 2 Tbsp Red Pepper Paste
* 3 Tbsp Brown Sugar
* 3 Tbsp Honey
* 1 tsp Salt
* 1 Tbsp Sesame Seeds

Korean Spicy Cold Noodles Recipe - the Perfect Summer Dish Idea (Bibimguksu)
Been feeling hot lately? I made this spicy cold noodle that really helped me cool down. It's my summer time go-to lunch menu. This recipe uses somen, and is called bibimguksu (비빔국수) in Korean. There is another kind cold noodle out there called naengmyun in either chilled broth or spicy sauce, which is also super popular. This somen cold noodle recipe is so much easier to make at home though. This is one of those recipes where if you have the ingredients in the pantry, you can whip this up in 5 minutes. Ingredients:
Sauce
2 tbsp gochujang
3 tbsp apple cider vinegar
1 tsp light sodium soy sauce
2 tsp brown sugar
1 tbsp sesame oil
1 tsp gochugaru
3 cloves minced garlic
Noodles & toppings
Somen noodles
1 egg
1/2 cucumber
1 lettuce leaf
2 tbsp purple cabbage
2 tbsp kimchi
Pinch of sesame seeds

If you’ve got 5 minutes, you’ve got yourself a big bowl of BIBIM-GUKSU (or bibim naengmyeon)! These Korean cold, spicy, chewy noodles are deliciously light and refreshing, yet bold and punchy. The spiciness, sweetness, and tanginess makes the perfect mouthful ????
Ingredients (serves 2):
☐ 2 servings of somyeon (thin wheat flour noodles)
☐ 2 tbsp gochujang (Korean red chilli paste)
☐ 2 tbsp gochugaru (Korean chilli flakes)
☐ 2 tbsp rice wine vinegar
☐ 2 tbsp sesame oil
☐ 1 tbsp soy sauce
☐ 2 garlic cloves (finely minced)
☐ 2 tsp sugar
☐ Cucumber (julienne)
☐ Toasted sesame seeds
☐ Soft boiled egg (optional)
