How To make Vegetable Stew with Spicy Peanut Sauce
1 lg White onion
peeled
1 Red bell pepper :
seeded
1 Yellow bell pepper seeded
1 lb Cabbage
2 md Carrots :
peeled
4 cl Garlic
1/2 lb Fresh green beans
2 tb Soy sauce
2 tb Dark brown sugar
2 1/2 tb Olive oil
1 tb Fresh ginger -- minced
1/2 ts Crushed red pepper flakes
2 c Broccoli florets
2 c Cauliflower florets
1 3/4 c Vegetable broth
1/2 c Peanut butter
1 1/2 tb Lemon juice
1 t Sugar
1/4 c Chopped dry-roasted peanuts
1/4 c Scallions -- chopped
Cut onion, bell peppers and cabbage into 1-inch squares. Cut carrots on diagonal into thin slices. Chop 3 cloves of garlic and crush remaining clove through press. Cut green beans into 1 1/2-inch pieces. Combine soy sauce and brown sugar. Heat oil in a large deep skillet. Stir-fry onion over high heat for 2 to 3 minutes, until browned around the edges. Add carrot, bell pepper, chopped garlic, ginger and pepper flakes and stir-fry 2 minutes. Add cabbage and stir-fry until slightly wilted, 3-5 minutes. Add broccoli, cauliflower, and 1 1/2 cups of the broth. Bring to a boil, cover and cook, stirring occasional, 5 to 7 minutes. Menawhile, in a small bowl combine
peanut butter, remaining broth,soy sauce mixture, lemon juice, sugar and crushed garlic. Stir into stew and simmer uncovered, for 5 minutes. Serve in chopped peanuts and scallions sprinkled on top. AMAZING PEANUT SAUCE ???? + 3 RECIPES
One of my favourite sauces EVER! It's creamy and super flavourful and best of all, easy to make with minimal ingredients that you probably already have at home.

CREAMY PEANUT GINGER SAUCE RECIPE:
4 Tbsp Toasted Sesame Seeds
4 Tbsp peanut butter
2 Tbsp Tamari
4 Tsp (1.3 tbsp) Rice Wine Vinegar
2 Tsp Maple Syrup (or 1 date)
2 Cloves of Garlic
Equal amount of ginger
1/3 Cup water (+ an additional tbsp or 2 for desired consistency)
Blend all the ingredients together and add to your favourite stir-fry, noodles or salad.
Reduce the amount of liquid to enjoy as a dip that is great with veggies.

This meal happens to be our family favorite and has been for many years, even for the years before we went plant based. I learned the original recipe which contains chicken and palm oil from a Gambian friend so we adapted it to be oil-free plant based and still wonderfully delicious. It is a comforting stew that is super filling, served over rice or steamed greens, and pairs well with our delicious lentil flatbreads.

This is Quick. This is Simple. PLUS you might already have all the ingredients in your pantry.
This SPICY PEANUT NOODLE BOWL is so delicious and it's a game changer.
Full of flavour, full of love and hot damn it's spicy.
I used Egg noodles but you can use whatever noodles you have at your place and I hope you try this recipe! SOOO GOOD!!!

Quick and Simple Peanut Satay Sauce

There are many variations of peanut or Satay sauce, some can be quite complex if made from scratch. But with a few short cuts it's surprisingly simple to make. This recipe is super simple and the results are outstanding. You could use fresh peanuts if you have the time, otherwise a good quality crunchy peanut butter does an excellent job. This sauce also goes well with any grilled skewered meats, over vegetables or as a dipping sauce. Also see my chicken Satay recipe.
