Silly me for posting the spring roll recipe and not the dipping sauce that goes with it.
1 cup water or milk, almond milk, coconut milk
1/4 cup hoisin sauce
1/2 cup peanut butter (chunky or smooth)
1. Bring over some heat and stir stir stir!
2. It will be watery at first but eventually thicken up

This is a dish that I’m sure everyone knows.. I call these spring rolls, but some of you may call it summer roll ???????? it’s an everlasting debate that I don’t think will ever be settled.
Spring rolls are the perfect party dish since everything can be cooked ahead of time and it just needs to be rolled when ready to eat. If you want a food party idea, I highly highly recommend a spring roll party ???? I had one a few weeks ago and it was so much fun! I laid out all of the ingredients for everyone and we all made spring rolls to our liking.
note: these should be eating right away so the rice paper stays fresh!
The peanut dipping sauce is ESSENTIAL. Here’s my recipe —
- ½ part smooth peanut butter
- 1 part hoisin sauce
- 1 part thick canned coconut milk or cream
- water to loosen, if necessary
I like to use tiger shrimp for spring rolls and make sure the shell is still on. This protects the shrimp from overcooking and leads to a much better texture. Keep that same water to gently boil the pork belly as well. How much salt should you use? Well a spoonful or two, depending on how much water you use. Taste it and see - it should taste salty, but not SALTY. My pork belly was small since it was just me eating, so it took about 15-20 minutes to finish cooking.

Versatile Thai Peanut Curry Sauce

Making a god meal can take a while and we don't always have time. This peanut curry sauce can be made ahead of time and tastes good on pretty much everything. noodles, vegetables, etc.
1 50g pack of massaman curry paste
1 tbsp vegetable oil
1 can of coconut milk
1 tbsp sugar (palm is best)
1 tbsp chili paste (not shown in video but its in there)
3 tbsp peanut butter
optional: crushed nuts, fry some shallots with the curry paste
- I prefer a thin sauce but you can reduce it more if you want for something creamier.

The EASIEST Peanut Dipping Sauce Recipe!
This Easy Thai Peanut Sauce Recipe only takes a few simple ingredients and 5 minutes to make. It’s full of creamy peanut butter, rich soy sauce, a little bit of sugar, and spicy Sriracha sauce. You can dip fresh spring rolls or chicken satay into it or drizzle it on any and everything that needs a sweet and spicy kick.

INGREDIENTS:
½ cup peanut butter smooth
2 Tbsp. soy sauce Tamari or gluten-free
2 Tbsp. brown sugar honey or coconut sugar
1 Tbsp. rice vinegar or lime juice
1 clove garlic crushed
½-1 tsp. Sriracha sauce to taste
3-6 Tbsp warm water
INSTRUCTIONS:
Add all ingredients, except for the water, to a medium-sized bowl.
Whisk until well smooth and well combined.
Slowly add in warm water 1 tablespoon at a time to help thin it out.
This recipe makes roughly ¾ cup of sauce, or 12 tablespoons. Serve sauce with Fresh Spring Rolls and enjoy!
RECIPE NOTES:
Meal Prep and Storage:
To Prep Ahead: You can prepare homemade peanut sauce up to 3-4 days in advance. The sauce will slowly start to lose some of its flavor.
To Store: Store prepared peanut sauce in an airtight container in the refrigerator for up to 2 weeks.
To Freeze: Freeze leftover peanut sauce in a freezer safe container for up to 4-6 months.
To Reheat: You can either let stored peanut sauce sit out on the counter for an hour before serving, microwave it in the oven for 10-20 seconds, or heat it up in a small saucepan on the stove until smooth and creamy.
Pro Tips and Tricks:
Microwave peanut butter for 10 seconds before adding in to help soften it up.
Add warm water, and not cold, so you can easily stir the peanut sauce until smooth.
Make a double or triple batch and store leftovers in the freezer.
Add a little Sriracha sauce at a time and taste after each addition until it reaches your desired spice level.

Quick & Simple Spicy Peanut flavored Prawn Spaghetti
Servings-1 person
-Cook Noodles as per package instructions and set aside
(Aim for 2 ounces of cooked pasta for a single serving or 1 ounce of dry pasta.
Make a circle with your index finger and thumb, then fill the center with long noodles)
-8 medium size Clean & deveined prawns & marinate with 1/2 tsp garlic, 1 tbsp chili oil, 1 tsp soy, 1 tsp dark soy,1/2 tsp black pepper, salt to taste mix set aside for 10 minutes
-1 zucchini cut into half and slice thick & set aside
-4 mushroom clean & cut
SAUCE MIXTURE
Same pan add
2 tbsp Peanut butter
1 tbsp Soy sauce
1 tsp Rice vinegar
1 tbsp Oyster sauce
1 tbsp Sriracha/1/2 tsp chilli powder
1 tsp Mixed garlic
1 tsp Sesame oil/olive oil
1/2 Chicken stock
1 tsp sweet chilli sauce/honey
1/2 cup Water little
Mix it well and set aside
Heat oil in a pan add Olive/sesame oil, add marinated prawns stir for 2 minutes, allow to cook till done (will take 5-6 minutes) remove and set aside
-Same pan add little more small cubes of butter stir zucchini, mushrooms for 2-3 minutes remove and set aside
Let it cook on slow heat mixture it well, Add cooked noodles
Add cooked prawns & zucchini, mushrooms mix well to combine
Garnish with crushed peanuts or pine nuts, sesame seeds, chilli flakes , cut Thai chilli
