I used to hate wontons. Growing up, I wanted nothing to do with them. Why? Because every time my parents would take us out to an Asian restaurant they would always order me wonton soup. Why did they do that? Well because they thought it was the most kid-friendly item on the menu. But I've grown up a little bit since then and when I tried these Spicy Chili Wontons, I had a total change of heart. I think it was that spicy peanut sauce that did me in. So, I'm going to show you how to make it.
Spicy Chili Wontons with Peanut Sauce Recipe

Ingredients -
- ¼ lb of ground pork
- ¼ lb of ground turkey
- ¼ lb of ground shrimp
- 2 stalks of finely chopped onions
- 2 tsps of sesame oil
- 2 tsps of shaoxing wine
- ½ tsp of sugar
- 1 tsp of salt, and some
- finely ground pepper
- medium-thick square wrappers
- ¼ cup of water
- oil
Peanut Sauce:
- ¼ cup soy sauce
- 1 tsp smooth peanut butter
- 2 tsps rice wine vinegar
- 1 tsp sesame oil
- ½ tsp sugar
- 1-2 tsp chili oil (depending on how spicy you like it)
Preparation -
In a large bowl I'm combining ¼ lb of ground pork, ¼ lb of ground turkey - you can also use ground chicken but I prefer ground turkey, and ¼ lb of ground shrimp. I made my own ground shrimp by taking whole ones and just grinding them in my food processor.
Then I'll add in 2 stalks of finely chopped green onions, 2 tsp of sesame oil, 2 tsp of shaoxing wine, this is like chinese cooking sherry. If you don't have it you can substitute for orange juice. ½ tsp of sugar, 1 tsp of salt, and some freshly ground pepper.
Then with my hands, I'll just mix everything together. I don't want it to become overmixed because want to keep a little bit of texture when they cook!
Now comes the fun part! It's time to stuff the wontons. I'm using these medium-thick square wrappers that I bought at the asian market. I'll take about 1 tsp worth of meat and spoon it towards the bottom center of the wrapper. I'll fold the bottom tip up, then fold it again, and now taking the bottom two edges, i'll just overlap them and squeeze. Just be sure to moisten the edge as you go. And there we have a little dumpling! Now only about twenty more to go!
To cook them all I need to do is add about ¼ cup of water into a nonstick pan, a little drizzle of oil, and place the wontons in my frying pan. I'll cook them covered for about 5 minutes over medium-high heat, then take off the cover and let it cook for 2-3 more minutes until they're fully cooked through.
The crowning touch of this dish is the spicy peanut sauce. To make that, all I'm doing is combining
¼ cup soy sauce, 1 tsp smooth peanut butter, 2 tsps rice wine vinegar, 1 tsp sesame oil, ½ tsp sugar, and then1-2 tsp chili oil (depending on how spicy you like it), and giving it a whirl until everything comes together.
It's like a little pocket of goodness! So savory and I love the texture of the Shrimp and the Pork in there. I love how the peanut sauce kind of brings everything together, and after you're done you can still taste a little bit of the heat from the chili oil. I hope you like these spicy chili wontons. These Vietnamese or Thai spring rolls make a great appetizer that you can even make up ahead of time. Make them earlier in the day of your party and then wrap them individually with plastic wrap to keep the rice wrapper from drying out and the rolls from sticking to each other.
These would be great appetizers for your New Years Eve party or anytime.
The spicy peanut sauce really compliments this dish. These are also gluten free as long as you use a gluten free soy sauce.

You can also fill these spring rolls with any vegetables you like. I'm using carrots, cucumbers, lettuce, basil, and cilantro. You can use parsley, bean sprouts etc. to name a few.
Ingredients:
rice paper rounds, soaked in warm water
1 package of fine rice vermicelli, soaked in hot water to soften, drain
cooked shrimp
1 carrot, thinly sliced
1 cucumber, thinly sliced
3 scallions, thinly sliced
tender lettuce, torn into pieces
fresh basil leaves, torn into small pieces
fresh cilantro, cut into small pieces
Peanut Sauce
1/2 cup peanut butter
1/2 Tbsp. sesame seed oil
1/4 cup soy sauce
4 tsp. sugar
2 cloves garlic, minced
sriracha sauce
1/2 Tbsp. rice vinegar
1 to 2 Tbsp. water or to the consistency you like
Place all peanut sauce ingredients except the water in a food processor and mix. Add water until you get the consistency you like.
