How To make Spicy Peanut Sauce For Satay
1 c Thick coconut milk
2 1/2 tb Red curry paste
3/4 c Thin coconut milk
1 tb Fish sauce
2 tb Light brown sugar
1 1/2 tb Tamarind water
1/4 c Ground unsalted dry roasted
-peanuts or 3 tb creamy -peanut butter In a pan, heat the thick coconut milk over low heat and cook until it thickens and becomes oily around the edges. Increase the heat. Add the curry paste and cook for 3 to 5 minutes, being careful not to burn. There will be a noticeable color and odor change as the mixture becomes properly cooked. Add the thin coconut milk gradually. Stir. Season with fish sauce, sugar, and tamarind water. Add the ground peanuts. Stir. Serve as a dipping sauce. The sauce will become spicier and thicker as it stands.

Ingredients for the peanut butter satay sauce:
3 heaped tbsp smooth peanut butter
1 tbsp dark soy sauce - (use tamari for gluten-free)
1/2 tsp chilli flakes - red pepper flakes
1 tbsp fish sauce - (sub with vegetarian fish sauce if you want it vegetarian)
7 oz (200ml) coconut milk - from a tin
1 tbsp light brown sugar
1/2 tsp ground coriander
Juice of 1 lime - (about 2 tbsp)
Toppings (optional):
1/2 tsp sesame seeds
1 tbsp roasted peanuts - finely chopped
pinch chilli flakes
1 tbsp fresh coriander - cilantro leaves

This Chicken Satay Is The Perfect Summer Recipe
This is a Thai-style Chicken Satay complete with an Indonesian peanut sauce to finish it off. The perfect summer recipe for the grill if you ask me.

Chicken Marinade: 1 1/2 lbs of boneless chicken thighs makes 12 skewers
1/2 cup avocado oil (any other neutral oil is fine)
1 oz fresh lemon grass (1 large stick of lemongrass)
8 cloves of fresh garlic
1/2 cup fish sauce
1 1/2 tbsp curry powder
4 kefir lime leaves (sub with the zest of 1 lime)
1/4 cup lime juice
Indonesian style peanut sauce:
2 tbsp avocado oil
1 large or 2 medium shallots small dice
5 garlic cloves small dice
1 1/2 Fresno chilis small diced
1 1/2 cups coconut milk
3/4 cups peanut butter (crunchy)
2 tbsp dark soy sauce
2 tbsp sweet soy sauce or kecap manis (sub with regular soy sauce)
2 tbsp lime juice
