Recipe - Barbs Chocolate Walnut Biscotti
INGREDIENTS:
-1 cup flour
●1/4 cup unsweetened dutch cocoa
●3/4 teaspoon baking powder
●1/2 teaspoon salt
●1/4 cup unsalted butter , softened
●1 1/2 cups sugar , plus
●2 tablespoons sugar (I use Splenda sugar blend for Baking, use half the amount of sugar)
●1 large egg
●1 tablespoon freshly grated orange zest
●1 tablespoon fresh orange juice
●1/2 cup chopped walnuts , toasted
Italian Grandma Makes Biscotti with Walnuts
BISCOTTI with Walnuts:
½ pound Butter (2 sticks)
2 cups Sugar
5 extra large Eggs
1 teaspoon Pure Vanilla Extract
5 cups All Purpose Flour
5 teaspoons Baking Powder
1 cup Whole Milk
1 - 1½ cups chopped Walnuts

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

1 3/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder

Tools: medium bowl, large bowl, electric beater, large cookie sheet, wire cookie rack
EGG WASH

BAKE WITH ME | Chocolate Walnut Biscotti
Hi Y'all! I am here with the first of many holiday inspired videos to come! This is the perfect and easy homemade gift for you to make this Christmas! It doubles both as a great stocking stuff treat or a luxury addition to your hot cocoa/ coffee bar to offer to guests when they arrive. Biscotti has a long shelf life so it's that perfect treat to make ahead of time so you are not rushing your holiday baking when Christmas arrives! Chocolate Walnut Biscotti
Yield: 24-26 Biscotti
Ingredients
- 210g Granulated Sugar
- 100g Brown Sugar
- 112g Butter, softened
- 4 Eggs
- 635g All Purpose Flour
- 1 tsp Salt
- 1 tsp Baking Powder
- 120g Chopped Walnuts
- 100g Semi-Sweet Chocolate Chips or Chopped Chocolate of your choice
- 30g Whole Milk or Heavy Cream
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon
Procedure
1. Preheat oven to 350˚F.
2. In a bowl of a stand mixer, cream together the butter and both kinds of sugar.
3. Add vanilla extract and mix in eggs, one at a time.
4. Once all the eggs have mixed in, add the milk and vanilla extract.
5. In a separate bowl, mix together flour, baking powder, cinnamon and salt.
6. With the mixer on low speed gradually add in the dry ingredients.
7. Once you have finished adding in the dry ingredients, gradually add in your walnuts and chocolate.
8. Once mixture has formed a thick (paste) dough, place all dough on baking sheet and pat down using your hands to shape the dough into a long rectangle down the centre of the baking sheet.
9. Bake for 20-25 mins, then let cool slightly before slicing into pieces.
10. Slice the biscotti into 24-26 pieces and bake for additional 12-13 minutes on each side; flipping the biscotti after the first 12-13 minutes.
11. Let cool completely before serving or packaging.

- butter 200 gr;
- eggs 6 pcs;
- sugar 250 gr;
- flour 600 gr;
- orange peel;
- baking powder 2 tsp;
- vanilla extract;
- dark chocolate 100 gr;
- dried cherry100 gr;
- walnuts 50 gr.
- yolk 2 pcs.
