How To make Biscotti with Almonds/Orange/Chocolate
8 Ounces unsalted butter
2 sticks
1 1/2 Cups sugar
3 Tablespoons orange rind :
finely grated
2 Tablespoons vanilla extract -- pure vanilla
6 Cups all-purpose flour
1 Tablespoon baking powder
1 Teaspoon salt
6 eggs beaten
1/4 Cup amaretto
2 Cups almonds, blanched :
toasted,sliced
2 Cups chocolate chips -- or pieces
Preheat oven to 350 degrees. In an electric mixing bowl, combine butter, sugar, orange peel and vanilla; beat until light and creamy. Sift together the dry ingredients. With the mixer on slow, add dry ingredients to butter mixture and mix until thoroughly combined. Slowly add eggs and amaretto. Add almonds and chocolate just until combined. Remove dough to a floured surface and form into two flat logs about 4 inches wide and the length of your cookie sheet. Lay the logs onto buttered sheets and place on lower rack of the oven. Bake until lightly browned, about 45 minutes. Remove to a rack to cool. With a serrated knife, cut the loaves into half-inch slices, placing the cut slices flat oon the cookie sheet. To make crisp, return them to the lower rack of the oven and cook until golden, 15-20 minutes. Remove the slices to a wire rack to cool then store in an airtight container. Use a decorative tin for gift giving. NOTE: If the biscotti lose their crispness, repeat the crisping stage. Jo Anne Merrill, recipe from the San Diego Union 9/1/93

This recipe pulls together in a few minutes and after that second bake you have a wonderful crisp cookie to enjoy with your morning coffee! You can add cranberries, a drizzle of chocolate or amost anythig else to maek these cookies your own.

Chocolate Almond Biscotti with Orange Zest
Italian-style almond biscotti with chocolate and orange zest.
RECIPE - CHOCOLATE BISCOTTI WITH ORANGE ZEST

INGREDIENTS
• 1/2 cup slivered blanched almonds
• 3 eggs
• 3/4 cup sugar
• 1 3/4 cup + 2 tablespoons all-purpose flour
• 2 tablespoons cocoa
• 1/4 teaspoon salt
• 1 teaspoon baking powder
• 2 teaspoons honey
• 1 teaspoon vanilla extract
• 1 tablespoon orange zest (from half an orange)
• 1 cup dark chocolate chips
• 1 tablespoon vegetable shortening
DIRECTIONS
1. Preheat oven to 350 F
2. Line a cookie sheet with parchment paper and add almonds
3. Bake almonds in the oven for 5 minutes
4. Allow almonds to cool at room temperature
5. In a bowl or stand mixer, cream together 2 eggs and 3/4 sugar
6. Add flour, cocoa, salt, baking powder, honey, vanilla extract and orange zest, then mix
7. Add toasted almonds and mix just until combined
8. Divide dough into 2 parts and roll each to form a log 10 inches long
9. Beat one egg in a bowl and brush each log with a thin layer of egg wash
10. Bake in oven 20 minutes, then cool at room temperature 5-10 minutes
11. Carefully cut each log on the diagonal into 1/3 inch slices
12. Place pieces on their sides on the parchment-lined baking sheet
13. Bake in oven 10-20 minutes, or until dry
14. Melt 1 cup dark chocolate chips with 1 tablespoon shortening in the microwave, starting with 1 minute, then adding 15 seconds as needed to reach a smooth consistency
15. Drizzle chocolate onto the biscotti, or dip biscotti into chocolate glaze
16. Serve with coffee

Vegan Almond Orange Chocolate Biscotti
Hi friends,
As all of us get into the festive mood again, I bring you guys a perfect addition to your Christmas goodies. This vegan version of Biscotti is all you can ask for with your cup of coffee during this winter. Trust me when I say it's absolutely delicious and satisfying. Biscotti by nature are baked twice (baked well) and hence are dry and crisp. This helps them to provide a long shelf life ( around 15 days when stored in a clean airtight container). Although I am sure the stock won't last even a week when you give your special handmade gifts to your dear ones :). To make sure these are healthy, I have replaced part of the flour with whole wheat flour. The taste was great and I could not tell the difference between 100% all-purpose biscotti and these ones. However, you can change the proportion of flours to some extent at your end. I would not recommend 100% whole wheat flour as that might make the biscotti dense. Also, I have used only natural sugars (maple syrup and jaggery) in this recipe. I didn't use 100% jaggery as I thought it might make the biscotti chewier. Also since jaggery is by nature a bit salty, I was afraid that they might end up being saltier than required even if I skip the separate addition of salt. Feel free to use your choice of sugars - agave syrup, coconut sugar, etc should go well.
Following is the list of ingredients:
Wet Ingredients:
1) 1/2 cup plant-based milk (I used Kirkland soy milk)
2) 1/2 cup coconut oil (or any other neutral-tasting oil of your choice)
3) 1/2 cup sweeteners (I used 2/3 rd part of maple syrup and 1/3 rd part of jaggery)
Flavoring agents:
4) 1 tbsp orange zest (from around 3 medium oranges)
5) 2 tbsps chocolate chips
6) 12-15 almonds roughly chopped
Dry Ingredients:
7) 2 1/2 cup flour (I used 1 1/2 cup all-purpose flour and 1 cup whole wheat flour)
8) 1 & 1/4 tsp baking powder
9) 1/4 tsp pink salt

This is truly the best biscotti I have ever had and made.
Recipe Ingredients: 1/4 softened butter, 1 cup sugar, 2 eggs, 2 tablespoons finely grated orange zest, 1 tablespoon fresh orange juice, 1 tablespoon orange extract, 2 1/2 cups flour, 1 teaspoon baking powder, 1/4 teaspoon salt, 1 cup chocolate chips. Happy Baking!
