Recipe
Yield: About 3 dozen
Prep Time: 20 minutes
Cook Time: 55 minutes
Ingredients
¾ cup (150 g) granulated sugar (caster sugar)
½ cup (125 mL) vegetable oil
2 large eggs
2 tsp (10 mL) finely grated lemon zest
¾ tsp (4 mL) pure almond extract
¾ cup (120 g) whole raw almonds
½ cup (65 g) dried cranberries
1 ¾ cups (265 g) all-purpose flour (plain flour)
2 tsp (10 mL) baking powder
½ tsp (2 mL) fine salt
½ tsp (2 mL) ground nutmeg
1 egg whisked with 2 Tbsp (30 mL) water, for brushing
Directions
1. Preheat the oven to 325 F (160 C) and line a baking tray with parchment paper.
2. In a large mixing bowl, whisk the sugar, oil, eggs, lemon zest and almond extract together. Stir in the almonds and dried cranberries.
3. Sift the flour, baking powder, salt and nutmeg in a separate bowl, add this to the wet mixture and stir until completely blended. Shape the dough into 2 logs about 12-inches long, place on the baking tray and pat down to flatten (you can flour your hands to prevent sticking). Brush the logs with the egg mixture and bake for about 35 minutes, until a rich golden brown. Cool the logs on the baking tray a little bit, but so they are still warm to the touch.
4. Using a serrated knife, slice the logs into cookies just over ½-inch thick. Place these back on the baking tray, leaving just a little space between them (you may need a second baking tray) and return them to the oven to bake about 20 minutes, until lightly browned. Remove from the baking tray to cool completely.

Cranberry Pecan Oatmeal Cookies - The Ultimate Holiday Cookie Recipe - Ellen’s ChristKwan Series ????
Hello, Merry Christmas, and Happy Holidays my Friends!
On the sixth episode of my ChristKwan Series, I am making the ultimate Holiday Cookie, Cranberry Pecan Oatmeal Cookies! Simple, easy, soft and chewy, and loaded with fresh cranberries, crunchy pecans and lots of oatmeal! Everyone will love and enjoy these even Santa Claus when he comes down the chimney on Christmas Eve!
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon table salt
1/2 cup (1 stick, 8 tablespoons) unsalted butter, room temperature
1/2 cup packed light brown sugar
2 tablespoons white sugar
1 extra- large egg, room temperature
1 1/4 teaspoons pure vanilla extract
1 1/2 cups old fashioned rolled oatmeal
1/2 cup fresh cranberries, rinsed, remove the bad ones and roasted (or dried cranberries)
1/2 cup chopped pecans
1 orange, zested
Makes 12 to 16 Cookies
For the Cranberries
Preheat Oven to 250 Degrees
Place the cranberries onto a 8 or 9-inch round or square cake pan, roast for 5 to 10 minutes; remove from the oven and let them cool completely.
Preheat oven to 350 degrees (for the pecans and the cookies)
Line a 9x13-inch cookie sheet with aluminum foil; spread the pecans in an even layer and bake for 5 to 7 minutes or until toasted (be careful not to burn them). Remove the pecans from the oven and cool completely (they will become crunchier as they cool). Once the pecans cooled, spread them on the bottom of the pie crust into an even layer. Set aside.
Cookies: In a medium bowl, add and whisk in the flour, cinnamon, baking soda, and salt. Set aside.
In a stand mixer with paddle attachment or large bowl of an electric hand mixer, and in the butter, white sugar, and brown sugar, cream on medium-high speed until fluffy (about 3 minutes). Add in the egg and beat on high for 1 minute then add and mix in the vanilla extract and orange zest. Reduce the mixer to low and add the flour mixture, mix until well combined. Add and fold in the oatmeal, cranberries, and pecans until just combined. Cover the dough with plastic wrap and chill in the refrigerator for at least an hour.
Line a 9x13 in baking sheet with parchment paper, aluminum foil or a Siloam mat. Using a small cookie scoop, drop tablespoonfuls of the cookie dough onto the prepared cookie sheet and bake for 10 minutes or until edges are lightly browned but center is still soft and unset. Remove the cookies from the oven and let them cool for 5 minutes on baking sheet, then transfer them to a cooling rack to cool completely. Serve with a glass of milk (if desired) and enjoy!

How to Make Soft & Chewy Lemon Crinkle Cookies
INGREDIENTS
for 20 cookies
1/2 cup butter, softened (113g)
3/4 cup granulated sugar (150g)
1 egg
2 tbsp fresh lemon juice (30ml)
1 tbsp lemon zest (6g)
1 1/2 cups all-purpose flour (192g)
1/2 tsp baking powder
1/8 tsp salt
2-4 drops yellow food coloring (optional)
Powdered sugar for coating
Bake at 350°F (180°C) for 12 minutes.

Soft, chewy, and full of Mint and Chocolate flavor, these are Scrumptious and delicious!!! If y’all a fan of Mint and Chocolate, y’all will enjoy these!!!
Ellen’s Irish Soda Bread Recipe:
Ellen’s Grasshopper Pie Recipe:
Dry Ingredients
2 cups self rising or all purpose flour
1/2 tsp baking soda
1/2 tsp salt (if using all purpose flour)
Wet Ingredients
1/2 cup (1 stick) unsalted butter, softened
1 cup white sugar
1 extra large or jumbo egg, room temperature
1/2 cup sour cream
1 small box (3.4 oz) instant vanilla pudding mix
1 tsp pure vanilla extract
2 tsp pure mint or peppermint extract
3 drops blue food coloring + 10-15 drops green food coloring
1 1/2 cups chocolate chips (semisweet, dark, milk, or mint chocolate)
Preheat Oven to 375 Degrees
In a small or medium bowl, add the flour, baking soda, and salt (if using); sift or whisk until well combined and set aside.
In a large bowl with hand mixer, add the butter and sugar; cream on medium speed until fluffy. Next add in egg, sour cream, and pudding mix to the butter mixture and mix until well incorporated. Slowly add in the flour and mix on low speed until well combined (scrape the bowl occasionally). Then add in the vanilla extract, mint extract, blue and green food coloring and mix until well blended and desired color is achieved. Add in the chocolate chips and fold them in. Line a 9x13 inch cookie sheet with parchment paper or aluminum foil; using a spoon or cookie scoop, scoop the dough onto the pan 2 inches apart. Bake for 10 minutes until golden brown on the bottom. Remove the cookies from the oven and cool on a wire rack for 5-10 minutes. Place the cookies on a cake stand or plate, serve and enjoy!

Light, chewy, and bursting with layers of flavor; these scream the Holidays and everyone will love and enjoy these! Perfect treats for Santa Claus when he comes down the chimney on Christmas Eve!
1/2 cup (1 stick) unsalted butter, softened
1/2 cup (1 stick) margarine, softened
1/2 cup white sugar
1/4 cup packed light brown sugar
1 large egg, room temperature
1 1/2 teaspoons pure almond extract
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 cups all purpose flour
1 (10 ounce) jar Maraschino Cherries, drained and finely chopped
2 cups white chocolate chips
Makes 16 to 17 Cookies
Preheat Oven to 375 Degrees
Line 2 (9x13 inch) cookie sheets line with parchment paper and set aside.
In a medium bowl, add in the flour, baking soda, and salt; whisk or sift together until well blended and set aside. In a large bowl with hand mixer or stand mixer with paddle attachment, add in the butter, margarine, white sugar, and brown sugar; cream together on medium speed until creamy and fluffy. Next add and mix in the egg and almond extract until well blended. Gradually add and mix in the flour mixture into the butter mixture until incorporated. Add and fold in the chopped Maraschino cherries and the white chocolate chips. Using a cookie scoop or large spoon, drop the cookie dough onto the pan by the spoonfuls about 2 inches apart. Bake for 8 to 10 minutes until golden brown. Remove from the oven, let them cool for 3 to 4 minutes in the pan and then transfer to cooling rack to cool completely. Place the cookies onto a cake stand or platter, serve and enjoy!
