Only 3 ingredients are needed for this gluten-free walnut cookies recipe. That's it crushed or chopped walnuts, sugar and egg whites. Gluten-free walnut cookies are the perfect recipe if you're wondering 'how to use'; leftover egg whites and wondering how to use them up. A delicious light treats for any gluten-free friends or family members. These gluten-free walnut cookies taste like light meringue cookies. It will be hard to eat just one. I made them small in my video as I wanted to box them for a gift. Feel free to use a large spoon to make them bigger if preferred. Allow them to cool completely and they taste even better the next day.

DELICIOUS Almond Biscotti | Traditional Italian Recipe
Nonna’s vault of cookie recipes opens up once again revealing one of her most sought after recipes, the Almond Biscotti. Its all about technique and the steps, and of course the double bake method. Watch, learn and make your own biscotti right at home. You won’t believe your tastebuds!
✿ INGREDIENTS ✿
Eggs - 6 Large
Sugar - 1 Cup
Canola Oil - 1 Cup
Flour - 3.5 Cups
Baking Powder - 4 Teaspoons
Almond Extract - 2 Teaspoons
Almonds - 1 Cup, Course/Chopped/Roasted
✿ DIRECTIONS ✿
Using an electric mixer, beat eggs, sugar and oil on high for 2 minutes.
Then start adding flour a little at a time, as the mixer continues to mix, adding in baking powder and almond extract during.
Once all flour is in, mix on high for an additional 2 minutes.
Remove from mixer, add in the chopped almonds and mix by hand until well combined.
Line two large baking sheets with parchment paper.
With your new delicious batter, build two large/long logs on each baking sheet.
✫TIP - Watch Nonna for her technique and tricks to keep the dough easy and manageable .
Bake the logs at 350º for 20 minutes.
Remove from oven and slice the freshly baked logs into long biscotti shapes, angled cuts. Watch Nonna for the proper technique.
On Parchment covered baking sheets, place the fresh sliced biscotti evenly spread throughout.
Bake for an additional 20 minutes, until nice and dark golden.
