Pistachio Bundt Cake with Pistachio Pudding & Cake Mix | Bundt Cake Recipe
This pistachio Bundt cake recipe is one of my favorite cakes! Since you use 2 boxes of pistachio pudding mixes, this pistachio Bundt cake is so moist! Even if you don't like pistachios, give this pistachio Bundt cake a try since this Bundt cake does not even taste like pistachios. Feel free to add extra pistachios and/or green food coloring to this Bundt cake recipe to give it an extra green color for holidays like St. Patrick's Day, Halloween, Christmas, or any day of the year!

Pistachio Bundt Cake Recipe Ingredients
1 box yellow cake mix
2 packages 3.4 Oz instant pistachio pudding mix
1 ½ cup of water
4 eggs
¼ cup vegetable oil
1 tsp almond extract
7 drops of green food coloring (optional)
½ cup chopped pistachios (optional)
1 tbsp melted unsalted butter
1 tbsp all-purpose flour
Directions
1. In a large bowl of a hand or stand mixer, add yellow cake mix, 2- 3.4 oz. packets of instant pistachio pudding mix, water, eggs, vegetable oil, and almond extract. Mix on a low speed until all of the ingredients are combined, scraping down the sides of the bowl as necessary with a spatula. If you would like a really green cake, add a few drops of green food coloring into the batter. I added about seven drops of Americolor green gel food coloring to this cake for a deeper shade of green.
2. Brush on melted butter to a Bundt pan making sure you cover the entire pan and sprinkle some all-purpose flour to the pan after adding the butter to ensure the Bundt cake does not stick.
3. Pour the batter into the Bundt pan and bake in a 350 degree preheated oven for around 45 minutes. You will know the cake is done when a toothpick comes out clean.
4. After the Bundt cake has completely cooled, feel free to add any glaze or powdered sugar on top.

Pistachio Cake
This pistachio pudding bundt cake is truly tender and delicious! Adding pistachio pudding to cake mix transforms something average into something amazing.

Ingredients:
1 box yellow cake mix
1 box 3.4 oz instant pistachio pudding mix
1 cup water
1/4 cup vegetable oil
4 eggs
Powdered sugar for dusting
Instructions:
Preheat oven to 350°F. Grease and lightly flour a bundt pan, or use baking spray.
In a large bowl, beat the cake mix, pudding mix, water, oil and eggs for 2 minutes.
Pour into bundt pan and bake for 50-60 minutes, or until a toothpick inserted near the center comes out clean.
Let cool in pan for 15 minutes, then invert cake onto wire rack and let cool completely. Dust with powdered sugar before serving.
Tips:
The color will be a very pale green depending on the brand of cake mix you use. I always use yellow cake mix for a more buttery flavor, but it will also work with vanilla or white cake mix. If you want the color to be more pronounced, a couple drops of green food coloring will do the trick.
The majority of boxed cake mixes call for three eggs at most, so adding that extra egg makes this cake richer. It's not as heavy or dense as pound cake, but boasts a tender crumb that's perfect for slicing.
