.Soft Butter 180 g
.Whole Cane Sugar 120 g
.Egg 1
.White Chocolate 100 g
.Ground Pistachio 80 g
.Baking Powder 5 g

Bake in a static oven at 170 °C / 340 °F for 15 minutes, or until they become slightly golden brown, let it cool on a wire rack, and store them like normal cookies, they will be good for at least 5 days

Pistachio Stuffed Cookies Recipe
These cookies are one of the best cookies I've ever made! Rich pistachio cookies filled with delicious pistachio filling, tastes just like heaven!

Ingredients:
For the cookie dough:
1/4 cup (60g) Pistachio paste
3/4 cup (175g) Softened Butter, unsalted
2 eggs
3/4 cup (150g) Brown sugar
1/4 cup (50g) white sugar
1 teaspoon Vanilla extract
2¾ cups (340g) Flour
1 teaspoon Baking soda
1/4 teaspoon Salt
For the filling:
1/3 cup (80g) Pistachio paste
180g White chocolate
For topping:
Chopped pistachios (optional)
Directions:
1. Make the filling: chop white chocolate, place in a heatproof bowl, add pistachio paste. Melt and mix until combined and smooth.
2. Place the bowl in the fridge for 30 minutes, them scoop about 1 teaspoon each time and shape a bowl. place on a plate and freeze while making the dough.
3. Make the cookie dough: In a large bowl, beat butter, pistachio paste, brown sugar and white sugar. Beat until creamy, about 2 minutes. Add egg, vanilla extract and beat until combined, scrape the bottom and sides as needed.
4. Sift in flour, baking soda, salt. Mix until combined.
5. At this stage if dough is too soft, cover and refrigerate for 20 minutes.
6. Preheat oven to 350°F (175°C). line two baking trays with parchment paper.
7. Scoop out about 1-2 tablespoons of cookie dough and flatten it, place frozen pistachio filling in the center, roll into a ball.
8. Place rolled balls on a parchment paper with about 2 inches apart. Top each cookie with chopped pistachios (optional).
9. Bake for 10-12 minutes or until lightly browned on the sides.
10. Cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.

I filmed this video on my iPhone. My husband usually films all of my videos, but I wanted to share this recipe with you. I took them to a Holiday neighborhood cookies exchange the day I made them and he was working and couldn’t film.
½ cup butter, softened
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
1-1/2 cup all purpose flour
½ teaspoon baking soda
1 cup white chocolate chips
½ cup pistachio nuts, shelled
1 cup dried cranberries
Note: add ¼ teaspoon salt, if your nuts are not salted
Preheat oven to 375°. Grease a cookie sheet or line with parchment paper and set aside.
In a large mixing bowl, combine the butter and sugars. Using an electric mixer, cream the butter and sugars until fluffy for about 3-5 minutes.
Beat in the egg and vanilla extract.
In a separate bowl, combine the flour and baking soda. Using a wooden spoon, carefully stir the flour mixture into the butter mixture, just until combined. Stir in the white chocolate chips, dried cranberries and pistachio nuts.
Drop heaping spoonfuls onto the cookie sheet.
Bake the cookies for 8-10 minutes (it took mine about 11 minutes) or until they just begin to turn golden around the edges. Allow to cool for 2 minutes on the cookie sheet before transferring them to a wire rack to cool completely.
