How To make Friar's Zucchini Bread
3 Eggs
1 c Oil
2 c Flour
1/4 ts Baking powder
2 c Sugar, brown or white
2 c Zucchini, peeled and grated
1 ts Salt
3 ts Cinnamon
3 ts Vanilla
Beat eggs, oil, sugar and zucchini. Sift dry ingredients together and add to mixture. Add vanilla. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour. Test tops by touching with one finger before removing from oven. Freezes excellent.

Modified from:
air fry for 15 minutes at 380F/195C
✅ Air Fryer Pork Tenderloin
✅ Air Fryer Savory Chickpeas
1 15 oz can chickpeas (garbanzo beans) drained. 1/8 teaspoon each of garlic & onion powder & 1/4 teaspoon each of cinnamon & smoked paprika. 390f/198c for 5 min, spray w/ oil, then 5 min, shake, 5 minutes, add 1/2 of seasoning, 2 minutes. Pour in bowl & stir in remaining seasoning.

Roast Chicken & Grapes with Chargrilled Bread
Recipe by Curtis Stone
Serves 4
Prep 10 mins
Cooking 20 mins
4 chicken thigh cutlets
1 tbs extra virgin olive oil
2 large shallots, halved lengthways
10 large thyme sprigs
1 bunch red grapes, separated into clusters
50g butter
Ciabatta or pane di casa bread, sliced
1. Preheat oven to 200°C. Lightly coat chicken with half the oil and season with salt and pepper.
2. Heat a large heavy-based frying pan over medium-high heat. Cook chicken and shallots for 5 mins each side or until golden. Add half the thyme. Transfer the chicken mixture to a baking tray.
3. Arrange grape clusters around the chicken on the tray. Roast for 15 mins or until the chicken is cooked through.
4. Meanwhile, heat a chargrill pan over medium-high heat. Melt butter with remaining oil. Add bread slices to the pan. Use the remaining thyme to brush the bread with butter mixture. Cook bread for 3 mins each side or until golden brown.
5. Transfer the chicken mixture to a serving platter. Serve with chargrilled bread.
