How To make Zucchini Parmesan Bread
3 cups all purpose flour
1 cup peeled, shredded zucchini -- drained
1/3 cup sugar
3 Tablespoons grated Parmesan cheese
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/3 cup butter
1 cup buttermilk
2 eggs
1 Tablespoon grated onion
Mix flour, zucchini, sugar, cheese, baking soda, powder and salt together; set aside. Melt butter; stir into buttermilk. Beat eggs in medium bowl; add butter/buttermilk and onion; stir into flour mixture. (Batter will be thick.) Spread in greased and floured 9x5x3 inch loaf pan. Bake at 350 for 1 hour. (Use toothpick inserted at center to test for doneness.

Zucchini Cheddar Cheese Bread
Ingredients:
1 shredded medium zucchini
1 1/2 c shredded sharp cheddar cheese
2 c flour
1 c whole milk
1 tbsp apple cider vinegar
1/2 tsp baking soda
1 egg
1/2 tsp salt
2 tsp baking powder
3 tbsp unsalted butter (melted)
2 chopped green onions
How-To:
Preheat oven at 350 degrees. Combine all of the dry ingredients. In a medium bowl add flour, baking soda, baking powder and salt. Whisk everything together. In a separate bowl combine wet ingredients. Combine milk, apple cider vinegar, butter and egg together. Whisk and combine together. Pour the wet ingredients into the dry ingredients. Stir and fold everything together. (Don't over stir because it can make bread dense). Put shredded zucchini in a paper towel and squeeze out any extra liquid. Add zucchini, cheese and chopped green onions. Stir and combine everything. Spray 9x5 loaf pan with nonstick spray. Scoop dough into the pan. Bake in a 350-degree oven for 1 hour. EAT AND ENJOY!

What we love about this bundt “cake” is how, despite all we stuffed in there, it’s not heavy at all. The eggs give the bread a slightly quiche-y quality, and the sour cream and greek yogurt keep it moist and guarantee that it won’t dry out. This cheesy zucchini bread doesn’t need butter or cream cheese to make it great, it’s amazing all by itself. We made a batch this weekend that was completely devoured, so when you do make it, prepare for it to go fast – grab your slice and get outta there!

Moist, homemade, old fashioned zucchini bread just the way grandma use to make it! I love this recipe for zucchini bread because it easy, quick, and produces gorgeous sweet bread that is so moist and dense. It goes fast in my house!!

Not only is this bread fairly healthy but it makes a great breakfast bread , snack or even add a little vanilla ice cream or cool whip to turn it into a dessert.
What does zucchini bread taste like? It kinda reminds me of banana bread. It's like a cinnamon bread. You can taste the brown sugars and spice. The zucchini flavors blends in well with the sweetness adding a healthy punch!
Zucchini bread and other quick breads freezes really well so I always make several loafs. I love the smell of zucchini bread cooking in the oven. It's a great late summer dessert that can really be enjoyed all year around.
Gift Idea Tip: Wrap slices of fresh, homemade zucchini bread in Seran wrap and place in a decorated tin container and give away as a gift. This bread is great for shipping as well!

Here, the zucchini and summer squash are sliced into rounds and roasted first; then layered with sauce and parmesan.
