How To make Whole Wheat Walnut Crumb Cake
1 cup walnuts or pecans
1/3 cup firmly packed brown sugar
1 teaspoon cinnamon
3/4 cup powdered sugar
2 tablespoons water
2 cups whole wheat flour
1 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/3 cup margarine or butter
1 egg
Heat oven 350F. Grease and flour 2 8 or 9 inch round cake pans. In small bowl mix nuts,brown sugar and cinnamon. set aside.
Lightly spoon flour into measuring cup; level off, in large bow, combine flour, sugar, baking powder, salt, milk, margarine and egg. Mix at low speed until moistened. Beat 2 more minutes at meium speed. Spread 3/4 cup batter into each cake pan. Sprinkle 1/4 of nut and sugar mix evenly over batter in each pan. Carefully spread remaining batter on top of nut and sugar mixture in pan. Then, spread remaining nut and sugar mixture on top of batter in pan.
Bake 350 for 20-30 minutes or until toothpick inserted comes out clean. Cool slightly. In small bowl, combine powdered sugar and enough water for desired drizzling consistency; blend until smooth. Drizzle over warm cakes. 2 cakes 6-8 servings each. TIP: Cake can be baked in 13x9 inch pan. 350 for 25-30 minutes or until done.

Coffee Cake with Walnut Crumble ☕️❤️
Welcome to episode 3 of #Cakewalk where we’ll discover my tried & tested cake recipes that’d be perfect for all occasions! This melt-in-your-mouth Coffee Crumble Cake is perfect for all coffee lovers. It will pair lovely with a glass of milk or as it is ☕️????❤️ I am obsessed with it and you will surely love it!
Here's how you make this scrumptious cake at home ☺️
Ingredients:
Flour - 1 + 1/4th Cup
Brown Sugar - 1/4th Cup
Dates - 3/4th Cup (de-seeded) / 170g
Baking Soda - 1/4th Tsp
Coffee powder - 2 Tsps
Water - 1/2 Cup / 120ml
Milk - 1/4th Cup / 60ml
Baking Powder - 1.5 Tsps
Baking Soda - 1/4th Tsp
Salt - 1/4th Tsp
Curd - 6 Tbsps
Oil - 5 Tbsps
Milk - 6 Tbsps
Vanilla Essence - 1/4th Tsp
Walnut Crumble
Maida - 3.5 Tbsps
Walnut - 2 Tbsps
Brown Sugar - 1/2 Tbsp
Cinnamon - 1/4th Tsp
Melted Butter - 1.5 Tbsps
32 mins 170C
Process :
* Pre-heat the oven at 170C
* For the Crumble : mix together brown sugar, cinnamon powder, a pinch of salt along with some melted butter
* Next, add in the flour & chopped walnuts & give it a mix - keep aside for later
* For the cake batter : to a saucepan, add in some milk along with pitted dates, water & baking soda - allow it to cook for 5-7 minutes until the dates are mushy
* Mash them up with the back of your folk or blitz them using a hand blender
* Transfer the mix to a bowl & add in some coffee powder & vanilla essence along with oil, brown sugar, curd & some milk - give it a good mix until it forms a homogeneous mixture
* Sift in the dry ingredients into the wet mix - flour, baking powder, baking soda & salt
* Combine gently to form a smooth, lump-free batter
* Transfer the batter to greased & lined baking tray
* Top up the cake with some walnut crumble & bake it in a preheated 170C oven for 30-35 mins/ until a skewer inserted comes out clean
* Allow the cake to cool down & de-mould it carefully
* Serve, Slice & Enjoy ????☕️
