Chocolate Cookie Crumb

Super quick and easy recipe for a basic chocolate cookie crumb. Nothing fancy, just nice to have in your repertoire of go to recipes. Use it to garnish plates, for cheesecakes bases, to crumble on ice cream etc. etc.

Chocolate cookie crumb recipe:
113 g butter
65 g sugar
65 g brown sugar
1 egg
1 tsp vanilla
120 g flour
50 g cocoa
pinch of salt
1/2 tsp baking soda

Method:
Cream together, butter, sugar, brown sugar and vanilla. Once well mixed, add in one egg and mix until light and fluffy. Combine dry ingredients- flour, cocoa, salt, and baking soda and add into the wet mixture. Mix until well combined on low.

Spread onto parchment lined baking sheet ad bake at 175 C (350 F) for 15 minutes.

Let cool and then crumble and serve.

????Ingredients for Berry Crumb Coffee Cake:

1/4 cup light olive oil (70 ml)
3 large eggs, room temp
1 cup granulated sugar (200 gr)
2 cups (260 grams) all-purpose flour
2 1/2 tsp baking powder
1 Tbsp lemon zest from 1 large lemon
1 tsp vanilla
1/3 cup (100ml) club soda
10 oz berries (300 gr or 2 cups)

Berry Cake Easy Topping:

90 gr flour (3/4 cup)
50 gr sugar (1/4 cup)
4 Tbsp (55 grams) unsalted butter, softened
1/4 tsp salt

Copycat Entenmann's Chocolate Chip Crumb Cake Recipe

This chocolate chip crumb cake recipe is a copycat of the Entenmann's classic.

Growing up on Long Island we always had Entenmann’s Cakes, Cookies and Donuts and still to this day I can’t walk by them in the grocery store without contemplating buying every single one. Its just so nostalgic! If you don’t know the brand, you’re missing out! My favorite one was always Chocolate Chip Crumb Loaf, its moist and fluffy and you get the perfect amount of chocolate chips in every bite. The crumb topping has a hint of cocoa powder and the perfect amount of buttery crunch. You are sure to enjoy this cake for breakfast, dessert or just a snack! I know I will be baking this time and time again! It’s a must!

Ingredients-

Cake-
1 Stick (1/2 Cup) Unsalted Butter, Softened
1/3 Cup Canola or Vegetable oil
1 1/4 Cups Granulated White sugar
2 Large Eggs
2 Teaspoons Vanilla Extract
1 Cup Sour Cream
2 Cups Cake Flour (NOT self-rising) (I use Swan brand, it comes in a red box)
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
3/4 Teaspoon Fine Table Salt
1 1/2 Cups Semi- Sweet Chocolate chips (You can also use Mini Chips too) (Toss the Chips in 1 Tablespoon of Flour just to coat, this prevents them from sinking to the bottom of the cake)

Crumb Topping-
1/4 Cup Plus 2 Tablespoons Granulated White Sugar
1/4 Cup Plus 2 Tablespoons Dark Brown Sugar
2 Tablespoons Cocoa Powder
1/8 Teaspoon Fine Table Salt
1/8 Teaspoon Cinnamon
1/4 Cup (Half a Stick) of Unsalted Butter, Melted
3/4 Cup Plus 2 Tablespoons Cake Flour (NOT self-rising) (I use Swan brand, it comes in a box)

Garnish-
1/3 Cup Mini Semi Sweet Chocolate Chips (You can use regular size too but the mini sprinkle nicely)
Confectioners Sugar for Dusting
