How To make Upside Down Brunch Cake
-CLIDDIE ESTES (NBTB20A) 1/3 c All-purpose flour
1/3 c Cornmeal
1 1/2 tb Sugar
1 ts Baking powder
ds Salt 1 Egg
1/3 c Milk
1 tb Cooking oil
1 tb Margarine; or butter
2 tb Brown sugar
8 oz Crushed pineapple;
-well drained 1 c Ham; cubed fully cooked
Maple; or maple-flavored -syrup (optional) Stir together flour, cornmeal, sugar, baking powder and salt. In a 2-cup measuring pitcher, beat together egg, milk, and oil. Set aside. In the cover (a 1-qt m/w safe casserole would work) cook margarine, uncovered, on 100% power (high) for 30 to 45 seconds or until melted. Stir in brown sugar until combined. Stir in pineapple. Cook uncovered, on high for 2 to 3 minutes or until bubbly, stirring once. Stir in ham. Add milk mixture to flour mixture and stir just until batter is smooth (do not overbeat). Spoon batter over hot sugar mixture. Cook, uncovered on 50% power (medium) for 6 minutes, rotating dish a half-turn once. Cook uncovered, on high for 2 minutes. Test for doneness by scratching the wet surface near the center with a wooden toothpick. A cooked texture should appear underneath. If not done, cook, uncovered, on 100% power (high) for 30 seconds to 2 minutes more. Let stand, uncovered, for 10 munutes. Invert
onto a serving platter. Cut until wedges. Serve warm with syrup. Makes 6 servings.

Recipe in English:
Ingredients:
-Khajoor (Dates) as required (Medjool or Mabroom)
Prepare Caramel Sauce:
-Sugar 1/3 Cup
-Water 2-3 tbs
-Makhan (Butter) 60g
-Vanilla essence ½ tsp
-Namak (Salt) 1 pinch or to taste
Prepare Cake Mixture:
-Maida (All-purpose flour) 1 & ¼ Cup
-Darchini powder (Cinnamon powder) ½ tbs
-Namak (Salt) ¼ tsp
-Baking powder 1 tsp
-Almond flour ¼ Cup
-Makhan (Butter) unsalted 200g (room temperature)
-Bareek cheeni (Caster sugar) 1 Cup
-Anday (Eggs) 5 (room temperature)
-Vanilla essence 1 tsp
-Caramel syrup or Honey
Directions:
-Use a sharp knife to cut the dates in half,remove & discard the pits & set aside.
Prepare Caramel Sauce:
-In a saucepan,add sugar,water & turn on the flame,spread evenly and cook on very low flame until it caramelizes & turns brown.
-Add butter & mix well until butter melts.
-Add vanilla essence,salt & whisk well & transfer the caramel sauce in an 8-inch baking pan lined with butter paper & spread caramel evenly in the pan.
-Arrange the date halves,cut-side up,in a circular fashion over the caramel sauce to cover entire bottom & set aside.
Prepare Cake Mixture:
-In a bowl,place a sifter,add all-purpose flour,cinnamon powder,salt,baking powder & sift all dry ingredients together.
-Add almond flour,mix well & set aside.
-In another bowl,add butter & beat well.
-Add caster sugar & beat well.
-Add eggs,one by one and beating well after each addition.
-Add vanilla essence & beat until just combined (don’t over mix).
-Now add dry ingredients & fold until combined.
-Transfer the batter to the pan with the dates and gently smooth over the arranged dates and tap few times.
-Bake in preheated oven at 170C for 50 to 55 minutes or until wooden skewer comes out clean.
-Take out from oven & let it cool completely.
-Cut into slices,drizzle caramel syrup or honey & serve!

-Makhan dal dein aur melt ho janay tak ache tarhan mix ker lein.
-Vanilla essence aur namak dal ker ache tarhan mix karein aur caramel sauce ko 8-inch baking pan (lined with butter paper) mein dal ker evenly pheela lein.
-Halves khajoor ko circular fashion mein caramel sauce ka upper arrange ker lein (cut-side up) & side per rakh dein.
Prepare Cake Mixture:
-Bowl mein sifter rakh dein,maida,darchini powder,namak aur baking powder dal ker ek saath sift ker lein.
-Almond flour dal ker ache tarhan mix ker lein & side per rakh dein.
-Alag bowl mein makhan dal ker ache tarhan beat ker lein.
-Bareek cheeni dal ker ache tarhan beat ker lein.
-Ek,ek ker ka anday shamil karein aur ache tarhan beat kertay rahein.
-Vanilla essence dal ker ache tarhan beat ker lein (don’t over mix).
-Ab dry ingredients dal ker spatula ki madad sa fold ker lein.
-Tayyar batter ko baking pan mein khajoor ka upper dal ker evenly pheela lein aur few times tap karein.
-Preheated oven mein 170C per 50 to 55 minutes ya skewer clean anay tak bake ker lein.
-Oven sa nikal lein aur thanda ker lein.
-Slices mein cut ker lein aur caramel syrup or honey dal ker serve karein!

Ingredients:
170 grams – plain flour (1 cup)
90 grams – melted butter (1/3 cup)
1 tsp baking powder
½ tsp baking soda
180 ml unsweetened coconut milk (1 cup)
200 grams – condensed milk (3/4 th cup)
50 grams – desiccated coconut (1/2 cup)
Vanilla essence
Few pineapple slices and glazed cherries
2 tbsps melted butter
½ cup lightly packed brown sugar
Method:
- In a 1 kg/ 10 inch lightly greased cake tin, pour 2 tbsps melted butter and brown sugar all over the pan and keep it aside.
- In a bowl sift together flour, baking soda and baking powder. In another bowl whisk melted butter and condensed milk for a minute. Then add the vanilla essence and coconut milk, whisk till well combined.
- Add flour mix in 2 batches, fold in gently. Finally add desiccated coconut. The batter should be of dropping consistency. Adjust the consistency if needed with some more coconut milk.
- Scrape the batter in the prepared tin, give a light tap and bake at 160 Celsius 30 minutes. Until the toothpick comes out clean when inserted.
- Let the cake cool down in the mold for 10 minutes. Then demold on a plate. The cake ready to be served.
