How to make Blueberry Breakfast Cake | EASY RECIPE |
Hi everyone, it’s me Daisy and welcome to my channel. In today’s video, I'm going to share with you how to make blueberry breakfast cake. It's light and moist and topped with a crunchy crumb topping that makes us crave for more. It’s the kind of cake you want to make when you have guests or if you’re visiting a friend. It also makes a fantastic brunch. So, what are we waiting for? Let’s get started!
INGREDIENTS:
2 cups all purpose flour
½ cup caster sugar
2 tsp baking powder
1 large egg
½ cup milk room temperature
50 grams softened butter
1 tsp grated lemon peel
2 cups fresh or frozen blueberries
CRUMBLE TOPPING:
40 grams cold butter
½ tsp ground cinnamon
¼ cup finely chopped walnuts
¼ cup all purpose flour
? cup sugar
STEPS:
1. In a big bowl, add flour, sugar and baking powder. Stir to mix.
2. Make a hole in the middle. Then, add milk, lemon zest, egg and butter. Mix until fully incorporated. It takes time to mix because it is thick and sticky.
3. Next, fold in blueberries. This may take a few minutes since the mixture is thick.
4. After, add to an 8 inch round removable baking pan and set aside.
For Toppings:
5. Combine sugar, flour, walnuts and cinnamon. Whisk until combined.
6. Add butter and mix until the mixture is crumbly.
7. Then, add crumble to the top of the cake batter.
8. Bake in a preheated oven at 175 degree Celsius for 50 minutes or until the cake test is done.
9. Remove from the oven and let it cool down for a while and transfer to a wire rack to cool completely.
10. Serve and enjoy.

Ingredients:
Lemon Sour Cream Cake Layer
¾ cup granulated sugar
1 tbsp lemon zest
2 large eggs - room temperature
1 tsp pure vanilla extract
⅓ cup vegetable oil
½ cup sour cream - room temperature
1 ½ cup all-purpose flour - (192g)
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
Blueberry Cream Cheese Filling
8 oz. cream cheese - softened
¼ cup granulated sugar
1 large egg - room temperature
1 tsp pure vanilla extract
1 cup blueberries - fresh, or thawed from frozen and drained
Crumb Topping
¼ cup salted butter - cold, cut into small cubes
¼ cup granulated sugar
¾ cup all-purpose flour - (96g)
Lemon Icing
2 ½ cups powdered sugar, sifted - (282g)
3-4 tbsp fresh lemon juice
