Stevia in my opinion is sweeter than sugar, The good thing is when your cornbread or corn muffins are golden brown, then you know your cornbread / muffin are done.

Today, I'll be showing you how to make the softest corn muffins recipe ever. These are similar to the Costco corn muffins but way healthier with less fat and sugar in them and still taste amazing. These muffins are super moist, light, and fluffy inside with a beautiful golden yellow color that will impress everyone. This recipe is very easy and simple to do and comes together so quickly, making them a perfect addition to parties, potlucks, and barbecues.
You can make them sweet like I am here today, or savory by leaving out the sugar. A drizzle of honey is perfect for the sweet version, and cheese, chives, jalapeno, and bacon is perfect for the savory version. Don't forget to slather some butter on both though!

INGREDIENTS:
1 cup + 2 tablespoons all-purpose flour **(NOT 2 cups that was mistakenly said in the video)**
1/2 cup cornmeal
2 tablespoons cornstarch
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup vegetable oil (substitute with melted butter for more flavor)
1/3 cup sugar
1 egg
1/2 cup milk
1/2 cup sour cream

Creamed Corn Cornbread

Ingredients
2 cups yellow cornmeal
1 teaspoon kosher salt
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup buttermilk
2 eggs
1 cup creamed corn
2 tablespoons canola oil
Directions
Preheat oven to 425 degrees.
Place a 10-inch cast iron skillet into the oven.
In a bowl, combine the cornmeal, salt, sugar, baking powder, and baking soda. Whisk together to combine well.
In a large bowl, combine the buttermilk, eggs, and creamed corn, whisking together to combine thoroughly. Add the dry ingredients to the buttermilk mixture and stir to combine. If the batter will not pour, add more buttermilk to the batter.
Swirl the canola oil in the hot cast iron skillet. Pour the batter into the skillet. Bake until the cornbread is golden brown and springs back upon the touch, about 20 minutes.
