Pandemic Bran Muffins
6 cups Bran Flakes / Raisin Bran Add 2 cups boiling water & let stand for 5 mins
Almost 4 cups milk Add in 4 Tbsp vinegar & let stand for a few mins until curdled on top....Voila... I litre of Buttermilk !
In another bowl measure out 5 cups flour 2 Tbsp B. Soda 2 Tbsp B .Powder 1 tsp salt. Stir to MeetnGreet. Set aside.
In lge bowl Cream together: 1 1/2c brown sugar 1 1/2 c white sugar 1 cup butter
Add 4 eggs one at a time Add 1/4 c molasses.Mix. Add cereal mixture. Mix. Carefully add buttermilk. Add flour mix & fold in by hand. Add 1 1/2 extra raisins or dates if desired ....or chopped apples, pears from your freezer ! Spray muffin pan & using ice cream scoop fill cases to 2/3 full. Bake for 20 mins...less if using mini muffin tin. Put remainder of muffin batter in a 4 quart container & hide in the fridge ????...batter will keep for up to 6 weeks or at least until lockdown is over !

INGREDIENTS - 1 cup wheat bran - 1 cup boiling water - 1/2 cup softened butter (my mom always used Crisco) - 1 1/4 cup sugar - 2 eggs - 2 1/2 cup flour - 2 1/2 tsp baking soda - 2 cups bran cereal 2 cup buttermilk
DIRECTIONS 1. Pour boiling water over wheat bran and set aside.
2. Whip butter and sugar in mixing bowl. Add the remaining ingredients and mix slowly to incorporate.
3. Mix in the bran/water mixture until combined.
4. Bake in preheated 400 degree oven for 12-15 minutes, until golden brown.
5. The batter keeps in the refrigerated for 7-10 days. The muffins freeze well.

Flash Back Friday! My mom used to keep Raisin Bran Muffin Batter in a crock in the fridge for weeks. She'd warm up the oven in the morning, fill several muffin wells 2/3 full, bake at 400 for 20 minutes. Hot fresh bran muffins!
6 Week Raisin Bran Muffins Oven - 400 F 18-20 minutes Fill muffin tins 2/3 full
Dry Ingredients: 5 cups All-purpose flour 5 teaspoons Baking Soda 2 teaspoons salt 3 cups of Sugar (Optional) 1-1/2 teaspoons Cinnamon Put in Bowl and whisk together. Add and mix 15 oz box Raisin Bran.
In another bowl whisk together: 1 Quart of Buttermilk 1 cup of Vegetable oil 4 Eggs
Mix wet ingredients with dry ingredients. Put in Refrigerator and let sit overnight. -Mixture lasts for 6 weeks -can add any additional ingredients like nuts, orange peel, cranberries, etc.
