How To make Sweet and Spicy Carrot Soup
1 1/2 c Cold Water
1/2 ts Salt
16 oz Frozen Carrots; 1 Pkg
1 1/2 c Orange Juice
1/2 ts Nutmeg
1 c Chicken Broth
GARNISH:
1 x Orange; Thinly Sliced
1 x Mint Sprigs
Combine the water, salt and carrots in a 2 1/2-quart saucepan; cover and bring to a boil. Reduce the heat and simmer for 8 to 10 minutes, or until the carrots are very soft. Remove from the heat and let cool. In a blender or food processor puree the carrots and cooking liquid. In a large bowl combine the pureed carrots with the orange juice, nutmeg, and broth, blending well. Cover the bowl and refrigerate 2 hours or until well chilled. Serve cold with a garnish of one fresh orange slice and one mint sprig.

Ingredients needed:
-1 Big Carrot
- 2 medium-sized tomatoes.
- Half onion.
-Salt and black pepper for taste.
Method:
- Add the vegetables and 1 and 1/2 cup of water in a pressure cooker.
- Wait for one whistle before turning off the flame.
- Let it cool down completely before opening the lid.
- Blend the boiled vegetables thoroughly.
- Sieve the mixture to remove any lumps and get a smooth
consistency.
- Add the water used to pressure cook into this mixture.
- Let it simmer on low flame for 5 to 7 min.
- Add salt and pepper to taste.
- Serve hot

Spicy Sesame Carrot Soup with Red Lentils
This creamy and spicy sesame carrot soup is naturally vegan and made simple with pantry-friendly ingredients. It's super cozy, but also bright and wholesome. I love that a big pot full comes together in about 45 minutes.
Whole cumin and coriander are toasted and freshly ground for maximum flavour. Then we sauté our flavour base of onions, chili, garlic, and ginger in olive oil. All of our sliced carrots go into the pot along with some heavy pinches of salt and pepper. Split red lentils are stirred in and then we cover all of that with vegetable stock. After simmering for 30 minutes, the carrots are super soft. From here, we blend the soup with tahini, toasted sesame oil, and Tamari soy sauce until it's silky smooth. Bring the puréed soup back up to a boil and finish with some super bright lemon juice.
I like to garnish mine with swirls of tahini, chili oil, sesame seeds, and chopped cilantro. This soup is ideal with lots of crusty bread :)
