Asian Chilli Garlic Prawns
This packs BIG Asian flavours! Sweet, spicy, savoury, sticky sauce with garlicky plump prawns. Utterly addictive!

If you love roast chicken and barbecues, well you'll love this recipe.
Pungent, full of flavour, thick and sticky sweet
Brush it on your ribs, pork, chicken beef and give it that intense BBQ flavour. BBQ meat has been enjoyed as far back as 700 B.C. from Iraq to Turkey. It's hard to trace where the American BBQ sauces originated as they weren't documented in early cookbooks. Throw your meat on the grill and try this sweet and spicy BBQ sauce.
Gyros in the Style of Peking Duck // Far East Fusion
The flavors of Peking Duck aka Beijing duck, on chicken and wrapped up with some tzatziki in a chun bing, a spring pancake. It's like a gyro, but so much more than that. It's a combination that was screaming at me to be together. The chicken is marinated in one of the most important spice combos of China - Chinese 5 spice, or wǔxiāng fěn (五香粉) in Chinese, which translates to 5 fragrant powder.
I wrap it up with cucumber, carrot, and green onions, and top it with a glob of tzatziki.
In typical Far East Fusion fashion, among all the cooking I discover something magical about Chinese five spice, something that will alter the future of my existence.
RECIPE
CHICKEN MARINADE
TS 5 spice
2 TBS soy sauce
2 TBS shaoxing wine
2 globs oyster sauce
some oil
salt to taste
Cover slices of chicken with marinade and let sit overnight.
skewer chicken slices on bamboo skewer with half an onion as the base
Bak chicken in the oven at 200C or 400 F - for around one and a half hours, or until internal temperature is 75 C or 165 F.
TZATZIKI
Shred 1 cucumber
lemon juice
1 clove garlic
500 ML greek yogurt
salt
fresh black pepper
drizzle of olive oil
let sit in the fridge for at least 30 min.
SPRING PANCAKES/CHUN BING
300 grams flour
slowly add 190 ml hot water
knead for 3 minutes
cover and rest 20 min
roll out and divide into 12 pieces
flatten into disks - 4 at a time
coat 2 with oil
and 2 with a generous sprinkle of flour
press flour and oil sides together
roll out, flip, roll more
repeat with 2 stacks - oil on one, flour on other, sandwich them, and roll out, flipping occasionally until about the size and thickness of a tortilla
Repeat for all
cook in a dry flat pan med heat - about 3 min covered
flip
and cook a minute of so on other side
Julienne carrots, green onions, and cucumber
put a bit of everything in a wrap, roll, and eat.

Sweet & Sour Pork meets Tacos // Far East Fusion
Sweet and sour pork (or pineapple pork) in a taco with a tangy coleslaw. This pork is crispy and incredibly flavorful with a sweet and sour sugar vinegar sauce. In China, it's often called Bōluó gū lǎo ròu (菠萝咕老肉), which means pineapple pork. Pineapple is used in it to make it even sweeter, and tomato is often used to boost the sour taste. There are many different versions of this dish across China, but you will probably be most familiar with the version from Guangdong province, where Cantonese food was created. But the version that inspired this dish is from Northeastern China in Harbin province. Back when I lived in Chengdu, I frequented a few different Northeastern restaurants, and I always got this dish. You can see a video of me at one here:

Remember, cooking isn't about following a recipe, it's about creating something you like based on the ingredients you have. Make it to your taste. Adjust according to your ingredients. Don't just paint by numbers, paint something original.
That being said, here's the recipe for
Sweet and Sour Pork Tacos
MEAT - 1 lbs pork shoulder or other cut
cut into small slices against the grain
marinate in for 1 hour in:
2 tbs soy sauce
1 onion grated
1 inch ginger grated
3 cloves garlic grated
COLESLAW
500 grams thinly sliced cabbage
toss with salt
add:
1/4 cup thinly sliced red onion
1/2 bunch chopped cilantro
1 chopped jalapeno
1 lime skin and juice
2 tbs olive oil
toss and adjust salt after tasting
refrigerate
TORTILLAS
combine:
3 cups of AP flour
1 ts salt
1 ts baking powder
slowly add:
1/3 cup oil
1 cup warm water
knead well until dough is smooth
roll out on floured surface and cut into 16 pieces
coat each piece with flour
make into a ball and flatten with hand
let rest for 15 min
heat non-stick pan on med heat with a little bit of oil
roll each piece out thin
fry in pan until it starts to bubble, flip and fry for 1 min on other side (adjust heat if taking longer or shorter for it to bubble)
stack in a covered container
MEAT BATTER
230 grams corn starch or preferably potato starch
1 1/2 cups water
mix together and let sit 15 min
After 15 min, drain the water sitting on top leaving the wet starch paste
completely coat pork slices
(Add a tablespoon of water at a time if the mixture is too dry and hard to work with)
deep fry in 125 degree Celsius or around 250 F oil
cook meat about 2 min
remove and place on rack
fry again at 125C for 30 seconds
Prepare sauce
mix:
1/2 cup vinegar
1/2 cup sugar
1/4 cup water
2 tbs soy sauce
splash of sesame oil
in clean wok add:
2-3 tbs oil
2 chopped tomatoes
splash of cooking wine
1-2 min
add sauce
cook 5 min
scoop out tomatoes
add chopped:
1 red onion
1 red pepper
some chopped pineapple or a can roughly chopped
cook 1-2 min
combine 2 TBS of corn starch and a splash of water to make a corn starch slurry
add it a bit at a time to thicken sauce until it's gooey
add crispy pork and coat it in sauce
remove from heat
Assemble tortilla (if not soft and warm, heat in microwave covered on damp paper towel for 15 seconds)
stack with pork, and slaw.
squirt of sriracha, and eat!
