Ingredients:
1 1/2 cups flour
1/2 cup cornstarch
1 tsp salt
1 egg beaten
1 1/4 cup water
1 tbsp cooking oil
1 1/2 lbs chicken breast cut
Sweet & Sour Sauce
3 tbsp pineapple juice
1/4 rice vinegar
2 tbsp light soy sauce
1/4 Ketchup
1/4 cup sugar
2 tsp garlic powder
Cooking Oil for Frying
2 tbsp cooking oil
1 onion cut
1 green bell pepper cut
1 red bell pepper cut
1 cup pineapple chunks
cornstarch mixture
2 tbsp water

The Ingredients
300g chicken thighs / belly pork / pork shoulder steaks
1 egg
1 large bowl seasoned corn flour
The Marinade
Salt to taste
Pepper to taste
Sesame oil
½ teaspoon sugar
Light Soy sauce
The Sauce
4 tablespoons tomato ketchup
4 tablespoons vinegar
4 tablespoons sugar
Dark soy sauce
Optional Vegetables
1 onion
1 tin of pineapple or 200g fresh pineapple
1 green pepper

Recipe in English:
Ingredients:
-Caramelized biscuits 24
-Makhan (Butter) 2-3 tbs
-Cream 1 & ½ Cup
-Condense milk ½ Cup
-Evaporated milk ½ Cup
-Orange jelly crystals 3 packets
-Orange slices deseeded as required
-Orange juice 2-3 tbs
Directions:
-In grinder,add caramelized biscuits and butter, grind well.
-Take a serving dish,add biscuit crumbs and spread it with the back of a spoon and refrigerate for 15-20 minutes.
-In bowl,add cream and beat until soft peak is formed.
-Add condense milk,evaporated milk and beat again.
-Add orange jelly crystals and beat until well combined & crystals dissolve.
-On biscuit layer,add orange slices,orange juice and cream mixture,spread evenly.
-For garnishing, sprinkle biscuit crumbs and add oranges slices.
-Refrigerate and serve chilled.

Ingredients for Orange Chicken:
- Boneless Chicken thighs, cut into 1” pieces- 350 gms
For the Marination:
- Salt- 1/2 tsp
- White Pepper Powder- 1/2 tsp
- Egg- 1
For Batter
- Corn Flour- 3.5 tbsp US spoon measure
Orange Chicken Sauce:
(Tbsp- tablespoon, tsp- teaspoon)
- Fresh Orange Juice- 1 US cup measure (240 ml)
- White Sugar- 1.5 tbsp
- Brown Sugar- 1/2 tbsp
- White Vinegar- 1.5 tbsp
- Dark Soy Sauce- 1 tsp
- Ginger, grated- 1/2 tsp
- Garlic, grated- 1/2 tsp
- Red Chilli flakes- 1/2 tsp
- Sesame Oil- 1 tsp
Other Ingredients:
- Corn Slurry- 2 tsp corn flour mixed in 4 tbsp water
- Spring Onion Greens- 1 tbsp for garnish
- Oil for deep frying
Preparation:
- Cut the boneless chicken thighs into 1” pieces. Marinate with items specified. Mix well and set aside for 30 mins. After 30 mins add the corn flour and mix well to make it ready for frying.
- Take a small bowl and add all the ingredients specified for the sauce. Mix and set aside for use later. Make sure the sugar is dissolved before adding it to the wok later.
- Prepare the corn slurry and set aside. Stir it well again before adding to the wok.
- Chop the spring onion greens for garnish.
Process:
- Heat oil in a pan/wok for deep frying.
- Drop in the battered chicken pieces one at a time to not crowd the pan. Fry on medium heat for around 5-6 mins till golden. Remove and keep on a plate. Fry the rest in batches.
- Now take a wok and heat it.
- Mix the sauce once to make sure the sugar is dissolved and add it to the wok.
- Keep stirring it on medium heat for 2-3 mins till the sauce is cooked and starts thickening.
- Add the corn slurry, mix and cook it for a minute and then add the fried chicken pieces.
- Stir fry it on high heat for 1-2 mins till the chicken pieces are coated well with the sauce.
- Garnish with chopped spring onion greens and serve hot.

2 lbs boneless skinless chicken thighs
all-purpose seasoning (salt, pepper, garlic, onion powder)
1 cup corn starch
1/2 cup flour
1 quart buttermilk
oil for frying
green onion
fresno chili
Sauce:
3/4 cup sugar
3/4 cup white vinegar
1/3 cup soy sauce
1/4 cup water
zest and juice of 1 orange
1 tbsp garlic
1 tbsp ginger
2 tbsps honey
Slurry - 1-2 tbsps of water and 1-2 tbsps corn starch
Directions:
Cut chicken into bite sized pieces and season generously. Coat in buttermilk.
Start your sauce by adding sugar, vinegar, water, and soy sauce to a pot and bring to a simmer. Allow this to reduce for 10-12 minutes. Add your orange juice and zest and garlic/ginger. Mix to combine. Add in honey and combine. Mix together your slurry by adding water and corn starch together and then pour into your sauce. (this will help thicken the sauce). Add diced fresno chili
Season corn starch and flour generously and then take the chicken from the buttermilk and place it into the flour, a few at a time, ensuring they are coated evenly. Fry at 350 degrees for 4-7 minutes or until golden brown and 175 degrees internal temp. Coat in your sauce, garnish with green onion and serve.
