Vegetable Stir Fry so easy, there won't be A LOT ON YOUR PLATE

LAY HO MA (how's it going in Cantonese)! Back to the basics today with a classic recipe that's brimming with beautiful colours and textures. Join me in this episode and learn how to cook up a delicious vegetable stir fry recipe to enjoy tonight!
Ingredients:
80g broccolini
40g carrot
80g cremini mushrooms
1/2 red bell pepper
1/2 red onion
4 spears baby corn
90g smoked tofu
1 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp hoisin sauce
1 tbsp sriracha
1 tsp cane sugar
splash of toasted sesame oil
1+1 tsp avocado oil
Directions:
1. Chop the broccolini into bite sized pieces and the carrot into matchsticks. Brush the dirt off of the mushrooms with a paper towel. Then, chop them into quarters
2. Slice the red bell pepper and quarter the red onion. Chop in half the baby corn and the smoked tofu into bite sized cubes
3. Make the sauce by combining the soy sauce, dark soy sauce, hoisin sauce, sriracha, sugar, and toasted sesame oil
4. Heat up a nonstick pan to medium high heat. Add 1 tsp avocado oil followed by the smoked tofu. Sauté for 3-4min, then set aside
5. Add another tsp of avocado oil to the pan. Add the red onions and broccolini. Sauté for a couple of minutes allowing for the veggies to sear and get some colour
6. Add the cremini mushrooms and carrots. Sauté for a couple of minutes. Add the red bell pepper and baby corn. Sauté for another couple of minutes
7. Add the stir fry sauce and add back in the smoked tofu. Sauté for another minute
8. Plate the veggies and serve with freshly steamed rice

Vegetable Pasta In Sweet Pepper Sauce is super delicious and healthy dish. Roasted sweet pepper sauce is quick and easy to make. This sauce is versatile and tasty and can be used to make pastas, lasagna or vegetables. I am not particular about the combination of vegetables when I am using this sauce. I just use whatever vegetables I have in hand for my pasta dish and it always tastes awesome.

My Vegetable Pasta Bake is a veggie packed dinner that even the meat-eaters will devour - this vegetable pasta bake is tasty, filling comfort food.

Ingredients:
400 g (14 oz) dried pasta shapes (I used rigatoni)
1 tbsp vegetable oil
1 large red onion peeled and chopped into wedges
1 red bell pepper de-seeded and chopped into large chunks
1 yellow bell pepper de-seeded and chopped into large chunks
1 courgette (zucchini) chopped
pinch of salt and pepper
2 cloves garlic peeled and minced
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
2x 400 g (14 oz) tinned chopped tomatoes
120 ml (1/2 cup) double (heavy) cream
100 g (3 packed cups) fresh baby spinach
100 g (1 packed cup) strong cheddar cheese grated
100 g (1 packed cup) mozzarella grated
Small bunch parsley roughly torn

One Pot Vegetable Pasta - Quick & Easy
Our quick & easy one pot vegetable pasta recipe. In this recipe video, we'll show you how to make one-pot vegetable pasta, which is a quick & easy one-pot recipe for you to try at home.

Instructions for making one-pot vegetable pasta:
- Heat 1 tbsp of olive oil in a large pot over medium heat
- Add 2 garlic cloves minced and 1 onion finely chopped
- Cook slowly for 3 to 4 minutes until onion is translucent and sweet
- Turn heat up to medium-high
- Add 2 zucchinis halved lengthwise and cut into slices.
- Add 1 red bell peppers halved and sliced
- Cook 1 1/2 minutes
- Add all the following ingredients to the pot
- 1 cup corn (frozen or canned)
- 800 g / 28 oz crushed tomato
- 2 tbsp tomato paste
- 1.5 cups / 375 ml vegetable or chicken broth
- Stir until tomato paste dissolves
- Salt and pepper to taste
- Add 1 tsp of dried basil
- Add 1 tsp of dried Oregano
- When the liquid starts bubbling lower heat to medium
- Add 4 cups of ziti/penne pasta and stir
- Now add 1 broccoli broken into bite-size florets
- Place lid on and cook for 5 minutes
- Now add 1.5 cups shredded cheese of choice
- Put the lid on and leave for 1 minute until cheese is melted and pasta is perfectly cooked
- Garnish with parsley and serve
