How to Make Fruit-Filled Coffee Cake | My Food and Family
This fruit-filled coffee cakes starts with a simple box cake. Add sour cream, a little cherry pie filling and some toasted almond glaze, and you’ve got a cake that’s out of this world! And it’s so simple to make at home, you may never go to the bakery again.

What you need:
1 pkg. (2-layer size) white cake mix
1 tsp. ground cinnamon
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
3 eggs
1/4 cup water
1 can (20 oz.) cherry pie filling
1/2 cup PLANTERS Sliced Almonds, toasted
1 cup powdered sugar
4-1/2 tsp. milk
Let's make it:
1. Heat oven to 350°F.
2. Beat first 5 ingredients with mixer until blended; pour into 13x9-inch pan sprayed with cooking spray. Top with spoonfuls of pie filling.
3. Bake 35 min. or until toothpick inserted in center comes out clean; sprinkle with nuts. Cool 10 min.
4. Mix sugar and milk until blended; drizzle over cake. Cool completely.

Nut filling and topping
1 1/4 cup chopped walnuts
3/4 cup cup firmly packed, dark brown sugar
1 tsp. cinnamon
CAKE BATTER
3 cups all-purpose flour
1 Tbs. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups sugar
3 eggs
1 16 ounce container sour cream (about 1 3/4 cups)
1 1/2 tsp. vanilla
Preheat oven to 325. Grease 9in tube pan. To prepare nut filling, in a small bowl, combine walnuts, brown sugar and cinnamon; mix well and set aside. To prepare cake, in a medium bowl; sift together flour, baking powder, baking soda and salt; set aside. In a large bowl, with electric mixer on a low speed or with a wooden spoon, beat sugar and eggs until well blended. Beat in sour cream and vanilla. Add half of the flour mixture, beating until smooth. Fold in remaining flour mixture.
Pour half of the cake batter into pan; sprinkle evenly with half of the nut mixture.
Spoon in remaining batter. Top with remaining nut mixture.
With a knife, cut into batter to marble in nut topping. Bake 65-70 minutes or until cake tester inserted in center comes out clean. Remove outer rim of the pan; allow to cool completely. Remove cake from tube onto serving plate.

Cherry Coffee Cake is an easy to make coffee cake. This homemade treat can be put together easily with ingredients you already have in your pantry.

Sour Cream Blueberry Coffee Cake
1 cup butter (2 sticks), softened
2 cups granulated sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
⅛ cup all-purpose flour (to dust blueberries)
1 teaspoon baking powder
¼ teaspoon fine sea salt
1 cup fresh blueberries
½ cup light brown sugar
1 teaspoon cinnamon
½ cup chopped walnuts
Preheat the oven to 350°. Using butter, grease a 9-inch bundt pan and dust with flour. Place the bundt pan in the refrigerator while preparing the cake. This will allow the butter to stay in place and for an easier release.
In a stand mixer cream butter and sugar until light in color. Add eggs, one at a time, blending until all each egg is fully incorporated. Add the sour cream and vanilla. Blend just to incorporate but do not over mix.
In a separate container add flour, baking powder, and salt. Mix by hand to incorporate and add to the sugar mixture. Mixing only enough to incorporate the wet and dry mixture…do not overmix.
In a medium bowl add ⅛ cup flour with blueberries and toss to coat the berries. This will prevent the blueberries from falling to the bottom of the cake. By hand gently fold the coated blueberries into the cake batter.
Remove the bundt pan from the refrigerator and add ½ of the cake batter to the bottom of the bundt pan. In a small container combine the brown sugar, cinnamon, and walnuts. Sprinkle the sugar mixture over the cake batter, reserving about 2 tablespoons for the top. Add the remaining cake batter over the sugar mixture and sprinkle the cake top with remaining sugar mixture. Using a butter knife, swirl the batter to distribute the sugar layer. Smooth the top, if needed, and bake for 45-55 minutes. Cake will be done when a skewer inserted into the cake comes out clean and the internal temperature is 200-205°.
Remove from the oven and allow to cool on a wire rack for approximately 30 minutes. Invert onto a plate and enjoy!
