How To make Pineapple Upside Down Cake (Skillet)
1 cn Pineapple Slices In Syrup
(1 pound 4 ozs) 1/4 c Butter
2/3 c Brown Sugar, Firmly Packed
Maraschino Cherries 1 c Unbleached Flour, Unsifted
3/4 c Granulated Sugar
1 1/2 ts Baking Powder
1/2 ts Salt
1/2 c Milk
1/4 c Vegetable Oil (Or Solid
Vegetable Shortening) 1 lg Egg
1/4 ts Grated Lemon Rind
1 ts Lemon Juice
1 ts Vanilla Extract
Drain the pineapple, reserving 2 Tbls of the juice. Melt the butter in a heavy 10-inch ovenproof skillet. Stir in the brown sugar and reserved pineapple syrup, blending well. Remove from the heat. Arrange the pineapple slices in the sugar mixture in a balanced arrangement. Place a maraschino cherry in the center of each pineapple slice. Combine the flour, sugars, baking powder, and salt in a large bowl. Add the milk and oil then beat, with an electric mixer set on high speed, for 2 minutes. Add the egg, lemon rind, lemon juice and vanilla extract and beat for an additional 2 minutes. Carefully pour the batter over the pineapple in the skillet, spreading evenly. Bake in a preheated oven for 25 minutes or until the cake tests done. Remove from the oven and cool on a wire rack for 5 minutes. Place a serving plate upside down on the top of the skillet and invert the skillet and plate. Serve this cake warm. VARIATION: For Peach Upside-Down Cake, use a can of peach halves instead of the pineapple slices and proceed as above.

Simple Pineapple Upside Down Cake Hack using Box Cake Mix and a Cast Iron Skillet!
This simple and easy Pineapple upside down is one box cake mix hack you must try! Serve warm with whipped cream or even ice cream! Don't forget to share with your loved ones & Enjoy.
For the glaze
1/4 cup butter (4 Tbsp)
3/4 cup light brown sugar or brown sugar
About 7 pineapple rings from a 20oz can
10 or more maraschino cherries
For the cake
1 15oz box pineapple cake mix
4 eggs
2/3 cup melted unsalted butter
1 cup pineapple juice from the same can
1 tsp vanilla extract
Melt the 1/4 cup butter in a skillet and add the brown sugar to cover the bottom or the skillet. Get it off the stove and line the skillet or baking pan with pineapple rings then the cherries.
Mix the cake batter as instructed in the video and pour over the glaze. Spread evenly and bake immediately at 350 degrees Fahrenheit for 40-45minutes if using a cast iron skillet. Please note that baking time will be considerably less when using a regular baking pan. Allow to cool down and rest for about 15 minutes before Inverting it on a cake tray for that upside down look!

The beauty of a pineapple upside-down cake is how its base becomes a delicious caramelized topping once it’s done and flipped. In this easy recipe, that base is made with melted butter, brown sugar, and cherry-studded pineapple rings – all arranged under a layer of soft cake (made with boxed cake mix!) in a cast iron skillet. Unlike most other cakes, this one is nearly done once it’s out of the oven since you can skip the frosting and decorating steps.
