How To make Pineapple Upside Down Cakes
SYRUP:
1 cn 8 oz pineapple rings
1 tb Unsweetened pineapple juice
Concentrate, thawed 1/2 ts Cornstarch
1/4 ts Cinnamon
2 tb Butter
CAKE:
1/4 c Butter
1 lg Egg
1 ts Vanilla extract
1/2 c Unsweetened pineapple juice
1 c White flour
1/2 ts Baking soda
1/2 ts Baking powder
To prepare syrup, drain juice from can of sliced pineapple into a small saucepan. Reserve the pineapple slices for use later. Add pineapple juice concentrate, spices, and cornstarch to saucepan. Mix well. While stirring constantly, bring to a boil over medium heat. Boil 1 minute. Remove from heat, stir in butter, and set aside. To prepare cake, beat together butter (or shortening) and egg until creamy. Add vanilla extract and pineapple juice; beat thoroughly. Measure in flour, baking soda and baking powder. Beat just until blended. Batter will be thick. Set aside. Lightly butter 4 glass pyrex baking dishes approximately 4" in diameter. Spoon 1 tablespoon of syrup and place 1 ring of sliced pineapple into each dish. Top with batter, dividing it evenly in dishes. Spread to snooth. Bake in a preheated oven at 325 degrees for 25-30 minutes or until lightly browned. Remove from the oven. With a sharp knife loosen cake from baking dishes. Ingredients
Fruit Base
¼ cup (60 g) unsalted butter
⅔ cup (140 g) packed dark brown sugar
2 tsp (10 ml) lemon juice
5-6 slices tinned, or 4-5 fresh pineapple rings
Cake
¾ cup (175 ml) buttermilk
⅓ cup (80 ml) vegetable oil
3 large eggs
1 tsp (5 ml) vanilla extract
1 ½ cup (225 g) all-purpose flour
¾ cup (150 g) sugar
1 tsp (3 g) baking powder
½ tsp (2 g) salt
¼ tsp (1 g) baking soda
⅒ tsp (less than 1 g) ground nutmeg
½ cup (50 g) sweetened flaked coconut
Fruit Base Cake Assembly
1. Preheat the oven to 350 F (175 C).
2. Place a 9-inch ovenproof skillet on a burner on medium heat. Melt the butter and brown sugar, stirring until melted and bubbling. Stir in the lemon juice, then remove the pan from the heat. Arrange the pineapple slices in this syrup so they are close together but not overlapping. Set aside.
3. In a large bowl, whisk the buttermilk, oil, eggs and vanilla. In a separate bowl, sift the flour, sugar, baking powder, salt, baking soda and nutmeg. Add this to the buttermilk mixture and whisk until just blended. Stir in coconut. Pour the batter over the pineapple slowly (so as not to shift the fruit). Bake the cake for 30-35 minutes, until a tester inserted in the centre of the cake comes out clean. If using fresh pineapple, the cake may need an extra 5-10 minutes baking time. Let the cake cool for 30 minutes in the pan. Place a serving plate over the cake and invert the pan, lifting it to reveal the pineapple now on top. Serve warm or at room temperature.

Pineapple Upside Down Cake Simple and Easy
Pineapple upside down cake is so delicious. We have simplified it so much that you can make it in about an hour. If you have fresh pineapple by all means use it, but we simple use the rings you can buy in the can. They fit perfectly into a 9 inch cake pan. As always, you can alter the recipe according to your liking. For example if you want it a little sweeter, add more sugar. If you're diet conscious, add a little less.

Due to the simplicity of the recipe, it's great when friends suddenly show up for dinner. The kids will love it as well. It keeps nicely for a few days. 30g dark rum.
Caramel-Butter-Mixture
150g white sugar
5g vanilla bean
60g butter
15g lemon juice.
Batter:
120g butter
100g white sugar
100g eggs (2)
5g vanilla extract
1g salt
180g all-purpose flour
5g baking powder
70g milk
70g heavy cream.
