How To make Pasta and Smoked Salmon Salad
3/4 lb Smoked salmon cut in strips
2 qt Water
3/4 lb Linguini or spaghetti; dry
2 tb White vinegar
1/2 c Onion; finely chopped
1 c Whipping cream
3/4 c Dry white wine
1 tb Dijon mustard
1/4 c Grated parmesan
1/2 c Fresh parsley spriggs
Bring water to boil, cook pasta until tender; drain. As pasta cooks, boil venegar with onion in a frying pan over high heat until vinegar evaporates, about 2 minutes. Add cream, wine and mustard. Boil, uncovered, stirring often, until sauce is reduced to 1-3/4 cups. Add hot drained pasta; lift with forks to coat with sauce. Divide pasta and sauce evenly amoung 4 dinner plates; sprinkle each with 1 tb parmesan. Arrange salmon beside each serving of pasta, garnish with parsley. Season with salt and pepper. 15 MINUTE CREAMY SMOKED SALMON PASTA
~15 MINUTE CREAMY SMOKED SALMON PASTA~
This is my tried and true go-to recipe when I want something quick, healthy, easy and delicious. For a low fat version, use low fat cream cheese and for a super indulgent dish use cream instead. Occasionally I will use a herb flavoured cream cheese to switch things up. Make it your own! Whatever you choose, this is such an easy recipe that wins every time. Make it now!
Serves 4 hungry people. You will need:
1/2 onion, finely chopped
250g smoked salmon, roughly chopped
500g dried pasta
180g plain cream cheese
50ml milk
1 tbspn olive oil
1 tbspn dried Italian herbs (available in supermarkets)
1 tbspn garlic, finely chopped (around 3-4 fat cloves)
1 tbsn fresh parsley, chopped
1 tbspn parmesan, grated
1 tspn cracked black pepper
1 tspn red chilli powder or dried chilli flakes (optional)
Spritz of lemon juice
Salt, to taste
1. Fry onions in olive oil till translucent on medium heat, before adding the garlic. Fry for a minute till it smells fragrant. Careful not to burn the garlic.
2. Start boiling the pasta now and cook till 'al dente' (check package for instructions).
3. Next add Italian dried herbs to the onions, stir for a minute and add in the salmon. Cook on medium heat for a few minutes until the salmon turns opaque and begins to flake.
4. Add the cream cheese and stir through until it melts and becomes super creamy. Add milk to thin out the sauce. Season with salt, pepper and chilli powder/flakes to taste. Turn off the heat.
5. When the pasta is cooked, transfer to the salmon mixture. Allow some of the pasta water to transfer along with the pasta (around 1/4 cup) as this will help to create a glossy sauce. Stir until the sauce is fully coating the pasta.
6. Stir through the parsley, parmesan and a spritz of lemon juice. Check and adjust seasoning as necessary once more, and serve warm.
