BETH’S EASY SALMON ROULADE RECIPE
Serves 1
INGREDIENTS:
1 bunch watercress
Drizzle of Olive Oil
Sat & Pepper to Taste
2 tbsp (30 ml) cucumber, peeled and diced
1 radish, diced
3 tbsp (45 ml) Boursin Cheese
3 large slices of smoked salmon
fresh dill or parsley
2 lemon wedges
METHOD:
Place watercress on a plate to form a base. Drizzle with olive oil and season with salt and pepper
Dice cucumber and radish into tiny cubes. Lay out salmon, overlapping to form a triangle or rectangular.
Spread cheese on top of salmon, in the center. Top cheese with cucumbers and radishes. Roll up to form a log. Place salmon log on center of watercress bed.
Squeeze lemon wedge on top of salmon, add freshly cracked pepper.
Top with fresh dill or parsley.

In this masterclass, we walk you through:
Ingredients:
For the Herbed Waffles:
- 1 cup rye flour
- 1 cup whole wheat pastry flour
- 2 teaspoons baking powder
- 1/4 teaspoon sea salt
- 2 tablespoons coconut sugar
- 2 cups 2% milk
- 2 large eggs
- 1/4 cup canola oil
- 1/4 cup roughly chopped fresh dill, plus more for garnish
For the Lemon Yogurt Sauce:
- 1 cup non-fat Greek yogurt
- Zest from 1 lemon plus 2 teaspoons juice
- 1/4 teaspoon smoked paprika
- 1 pinch flaky sea salt
- Freshly ground black pepper to taste
- 2 teaspoons maple syrup
- 3 tablespoons cold water
For the Roasted Salmon:
- Non-stick cooking spray
- 1 tablespoon canola oil
- 8-ounce wild salmon fillet 3/4” to 1” thick, skin and pin bones removed
- 2 tablespoons white wine
To Assemble:
- 4 large eggs
- 2 tablespoons chopped chives
- 2 medium watermelon or regular radishes, thinly sliced
- Sea salt, to taste
- Freshly ground black pepper, to taste
Method:
To Make the Waffle Batter:
- In a large mixing bowl whisk the flours, baking powder and salt together until evenly combined. In a separate small bowl whisk together the sugar, milk, eggs, and oil until well incorporated. Pour the wet ingredients into the dry and stir until just combined, taking care not to over work the mixture. Gently fold in the dill. Set the batter aside until ready to cook.
To Make the Lemon Yogurt Sauce:
- In a small bowl, stir to combine the yogurt, 2 teaspoons lemon zest, lemon juice, paprika, salt, pepper, maple syrup and water. Cover and refrigerate until ready to serve.
To Make the Salmon
- Preheat the Breville Smart Oven Air Fryer Pro to 375°F on ROAST in rack position 6. Line the sheet tray with parchment paper or foil and coat with non-stick cooking spray.
- Season the salmon with salt and pepper and place on the prepared sheet tray. Roast for 6 to 8 minutes for medium rare. Remove from the oven and keep warm. The milk followed by the broth, making sure to whisk vigorously enough to ensure there are no lumps.
To Poach the Eggs:
- While the salmon is cooking, fill a medium saucepan halfway with cold water and add the vinegar. Bring to a simmer over medium heat. Prepare a medium bowl of water and keep it near the stove. Crack each egg into a small strainer over a bowl and drain any watery egg white (this trick makes perfectly round poached eggs). Carefully place drained egg into a ramekin or espresso cup. Repeat with remaining eggs. Stir the simmering water then carefully slip two of the eggs into the water: cook until the whites are set and the yolk is still runny, 3 to 4 minutes. Transfer to the warm bowl of water and repeat for the remaining eggs.
To Make the Waffles:
- Preheat the Breville Smart Waffle Maker on setting 3. Pour a heaping 1⁄2 cup of batter into each waffles section. Cook the waffles until golden brown, about 5 minutes. Remove and keep warm either covered with foil on a plate or in the oven.
To Assemble:
- Place 1 or 2 warm waffles on each plate. Use a fork to break the salmon into large flakes, top each waffle with some of the flaked salmon and poached eggs. Spoon the yogurt sauce over the tops and season with salt and pepper. Garnish with radishes, chopped chives and remaining lemon zest.

Smoke Salmon chive Hash brown - with Dill cream | Tasty brunch recipe
Ingredients:
1 Large potato
fresh dill, chopped
1 cup, heavy whipping cream
1 Tbsp. cream cheese
fresh chives, chopped
1 egg, beaten
1/4 tsp. salt
1/4 tsp. ground pepper
Butter
3-4 oz. small pack, Lox/Smoke salmon
garnish: chopped dill
