How To make Bourbon Marinated Smoked Salmon
1 1/2 pounds fresh salmon
skinned and boned
vegetable oil 1 cup bourbon
1 cup soy sauce
2 2/3 tablespoons fresh ginger
2 2/3 tablespoons black pepper
1/2 teaspoon chili powder
1 1/2 teaspoons garlic :
minced
3/4 ounce sesame oil
Place salmon in large shallow dish; cover with vegetable oil. Mix all other ingredients together to make marinade; marinate 6 hours or overnight. Grill over mesquite until flaky.

This delicious smoked salmon recipe is brined in a wet brown sugar and citrus brine then finished with a sweet orange glaze for incredible flavor. The taste of this smoked salmon is amazing, and you can serve it hot or cold.
Smoked salmon is a process where fresh salmon is either cold or hot smoked. Hot smoking is where the salmon is smoked at temperatures between 120° and 180° until the desired internal temperature is achieved. You can also hot smoke the salmon for several hours if you plan to wrap it, cool it, and serve it cold after several days, but the texture can be dry.
The other method is cold smoking which smokes at temperatures between 70° and 90° for several hours and even up to a few weeks. If smoking for several weeks, it turns the fish into salmon-jerky. If you brine the salmon and cold smoke it for several hours, you will get something known as lox.
My smoked salmon recipe is known as kippered salmon. This method is brined and hot smoked and can be served hot or cold. I prefer to cook it to 140° to 145° internally because I like to eat it warm.

Ingredients for this recipe:
• 3 cups water
• 2/4 cups packed light brown sugar
• 1/3 cup sea salt
• zest of 1 orange
• zest of 1 lemon
• 4 to 4 ½ pound side of salmon
For the Glaze:
• ½ cup brown sugar
• Juice of 1 lemon
• Juice of 1 orange
• ½ stick unsalted butter
• 1 tablespoon soy sauce

Smoked Salmon on a pellet grill couldn't get any easier than this! This recipe is only a few steps and the results will blow your mind... As a matter of fact it might just be the best dang grilled salmon that you've ever had! But you won't know until you try it, and you can't try it until you watch this video... so let's get started.

I start my salmon off by brining for 16hrs with a very simple brine recipe:
4 cups water
1 cup brown sugar
1/3 cup sea salt
When its time to get to grilling I remove the salmon from the brine and dry thoroughly with paper towel.
I used an olive oil binder on this salmon ( ), seasoned with a lemon pepper seasoning ( ), and the Sucklebusters Sugar Daddy ( )
One of the keys to smoking salmon is temperature! Temperature needs to be kept low. If you start to see white secretion from the salmon, your temperatures are too high ! Ideally we want the smoker temp to be 150-180F.

I start my smoker out at 160F for an hour. After the first hour at 160F, I increase the temperature to 175F and glaze the salmon every 30 minutes with (typically 3-4x). I smoked the salmon until the internal temperature of the salmon is 145F in its thickest part. It typically takes about 3 total hours to smoke the pellet grill salmon.
Honey Bourbon Glaze:
- 4:1 Honey to Bourbon ratio ( in this video it was 6 TBSP Honey : 1.5 TBSP Bourbon)
- Cajun Seasoning
- Garlic Powder

Candied Salmon - Maple Glazed Smoked Salmon
Maple glazed candied salmon is a really simple recipe to make and it's one of my favorite ways to prepare salmon. The maple syrup we use in the glaze forms a really sweet and tacky surface on salmon and it's infused with a ton of smoke flavor but still stays moist, flaky and tender.
Ingredients
- 2 pounds of fresh salmon
- 1 cup maple syrup for brushing
Brine
- 1/2 cup of brown sugar
- 1 cup maple syrup
- 4 cups water
- 1 cup kosher salt
Recipe
- Carve salmon into strips roughly an inch thick
- Brine for 12 hours or overnight
- Rinse in cold water
- Dry and place back in the fridge for 2 hours
- Pre-heat smoker to 170F
- Brush with maple syrup every 30 minutes
- Ready in 5-6 hours
- Let rest and glaze with maple syrup before serving
