How To make Orange Zucchini Cake
Ingredients

all-bran cereal

orange peel, grated

teaspoon
vanilla

zucchini, grated
1/2
cup
nuts, chopped
FROSTING:
3
oz
cream cheese, softened
1
tablespoon
butter or oleo, softened
1/2
teaspoon
orange peel, grated
1 1/2
cup
confections sugar, sifted
1
milk, if needed
Directions:
CAKE: In a large mixing bowl combine sugar, oil and eggs, beating until well blended. Add All-bran, zucchini, orange peel and nuts. Add flour, mixed with baking powder, baking soda and salt. Blend well. Spread batter in a greased and floured 6x10x2 pan or baking dish. Bake at 325 degrees for 35 minutes or until tester inserted in center of loaf comes out clean. Cool completely.
FROSTING: In a small mixing bowl beat cream cheese, oleo and orange peel until light and fluffy. Gradually add the powdered sugar, beating until fluffy and spreading consistency. Add milk sparingly if needed.
Cover top of cake (still in pan) with frosting.

In the Kitchen | Courgette(Zucchini) cake
Since London lockdown I grew some courgettes in my allotment and they were ready to pick just end of the lockdown, so I came up with the idea of making a cake. And here we go a Courgette cake with orange syrup video, it was super moist and fluffy!
Here is the recipe:
200g grated courgette
200g plain flour
120g sugar
1 egg
125ml rice oil or vegetable oil
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon baking powder
Orange syrup
2 orange
sugar ( I didn't measure but the syrup should be a little thick but pourable)

Simple Lemon Zucchini cake
This has got to be the best zucchini cake recipe. It is fast and very simple to make.
INGREDIENTS
½ cup vegetable oil

2 tsp finely grated orange/ lemon zest
1 tsp vanilla extract
1 ½ cup all-purpose flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 ½ cup loosely packed, coarsely grated zucchini
½ cup milk or dark chocolate chips (optional)

Ingredients
½ cup (115 g) vegetable oil
2 large eggs
1 cup (200 g) sugar
2 tsp (2 g) finely grated orange zest
1 tsp (5 mL) vanilla extract
1 ½ cup (225 g) all-purpose flour
1 tsp (3 g) baking powder
¼ tsp (1 g) baking soda
¼ tsp (1 g) salt
1 ½ cup (225 g) loosely packed, coarsely grated zucchini
½ cup (88 g) milk or dark chocolate chips (optional)
Directions
1. Preheat the oven to 350 F. Grease a 9-x-5-inch and line the pan with parchment paper so that it comes up the sides.
2. Whisk the oil, eggs, sugar, zest and vanilla together in a large bowl.
3. In a separate bowl, sift the flour, baking powder, baking soda and salt. Stir in the zucchini to coat it with the flour and add this to the wet mixture, stirring until blended. Stir in the chocolate chips (if using) and scrape the batter into the prepared pan.
4. Bake the loaf for 50 to 60 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake completely in the pan until turning out to slice.
5. The loaf will keep, well wrapped, for up to 3 days, and can be frozen for up to 3 months.
