Zucchini cake: a perfect recipe for a delicious dinner!
Pour 2 eggs over the zucchini, everyone will love the result!INGREDIENTS
• 3 zucchini
• 2 eggs
• 200ml / 0.82 cup kefir
• 2 tbsp flour
• 80ml / 0.37 cup olive oil
• 10g baking powder
• black pepper
• salt
• red pepper flakes
• chives
• parsley
• dill
• cheddar
METHOD
Dice zucchini. Add eggs, kefir, flour, baking powder, olive oil, spices, green onions, parsley and dill. Mix.
Put the dough in the form. Bake for 30 minutes at 180 ° C / 350 ° F.
Sprinkle cheese on top and bake for 5 minutes at 180 ° C / 350 ° F.

1 cup flour
1 tsp baking soda
pinch of salt
4 tbsp coconut oil
1/4 cup sugar
1 egg
1 grated zucchini (*squeeze water out)
dash of vanilla essence
1 cup chocolate chips

Zucchini Garden Chowder & Chocolate Zucchini Cream Cheese Cake
Zucchini Garden Chowder
2 medium zucchini, chopped
1 medium onion, chopped
2 tbsp minced fresh parsley
1 tsp dried basil
1/3 cup butter or margarine
1/3 cup flour
1 tsp salt
1/4 tsp pepper
3 cups water
3 chicken bouillon cubes
1 tsp lemon juice
1 can (14-1/2 oz) diced tomatoes, un-drained
1 can (12 oz) evaporated milk
1 package (10 oz) frozen corn
1/4 cup grated Parmesan cheese
2 cups shredded cheddar cheese
Pinch sugar
In a Dutch oven or soup kettle over medium heat, sauté the zucchini, onion, parsley and basil in butter until vegetables are tender. Stir in flour, salt and pepper. Gradually stir in water. Add the bouillon and lemon juice; mix well. Bring mixture to a boil; cook and stir for 2 minutes. Add tomatoes, milk and corn; bring to a boil. Reduce heat; cover and simmer for 5 minutes or until corn is tender. Just before serving, stir in cheeses until melted. Add sugar and garnish with parsley if desired.
Chocolate Zucchini Cream Cheese Cake
Batter:
1/2 cup butter
2 cups grated zucchini
1 tsp salt
2 eggs
1 tsp vanilla
1/2 cup sour milk or buttermilk
1 3/4 cup sugar
1/4 cup cocoa
1/2 cup oil
1 tsp soda
2 1/2 cups flour
Filling:
8 oz cream cheese
1/4 c sugar
2 tbsp milk
2 tbsp margarine
1 tbsp cornstarch
1 egg
Frosting:
1 cup sugar
1/4 cup butter
1/4 cup milk
1 cup chocolate chips
1 cup marshmallows
Preheat oven to 350 degrees. Combine filling ingredients in a mixing bowl and cream until smooth; set aside.
In a mixing bowl cream butter, oil and sugar for batter. Add eggs one at a time; beat well after each egg then mix in zucchini. Add flour, soda, cocoa and salt to batter a little at a time alternating milk and vanilla; mix until combined. (Don't over mix) Pour half of batter into greased 9 x 13 in. baking pan. Spread on filling. Pour remaining batter over filling; bake for 1 hour or until knife comes out clean.
Combine sugar, butter and milk in a medium saucepan or a microwave safe bowl; bring ingredients to a boil; remove from heat or microwave. Add marshmallow and stir until they are dissolved, then add chocolate chips stirring until melted; frost cake when cool to the touch.
