Apple Zucchini Muffins

Here’s what you’ll need to make this recipe:
Serving Size: 2 mini muffins
Preparation time: 15 minutes
Cooking time: 10 – 15 minutes
Ingredients:
For 24 portions
1 cup - All-purpose flour
1 cup - Whole wheat flour
1 cup - Quick oats
3 Tbsp - Flax seed, ground
2 tsp - Baking soda
2 tsp - Cinnamon
¼ tsp - Nutmeg
¼ tsp - Ginger
¼ tsp - Allspice
½ tsp - Salt
2 cups - Zucchini, grated
2 medium - Apple, peeled, cored and grated
3 - Eggs
3 tsp - Vanilla extract
¾ cup - Unsweetened apple sauce
¼ cup - Canola oil
Directions:
1. Preheat oven to 350 degrees. Coat mini muffin pan with canola oil spray.
2. Combine all dry ingredients; set aside.
3. In a separate bowl, combine eggs, vanilla, apple sauce and oil. Stir in grated zucchini and apple. Fold in dry ingredients until just combined.
4. Spoon in mini muffin tin that has been coated with canola oil spray. Bake for 10 to 15 minutes. Muffins will spring back when lightly tapped.

1 cup butter, melted (use vegetable or coconut oil for vegan!)
1 cup granulated sugar
1 cup packed brown sugar
3/4 cup unsweetened apple sauce
1/4 cup milk (could use apple juice)
1 tablespoon vanilla extract
2 cups all purpose flour
1 1/4 cups whole wheat flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon baking soda (I forgot to mention in video, sorry!)
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon cloves
1 1/2 cups shredded zucchini
1 1/2 cups shredded carrots
1 apple, seeded, diced
1 cup chopped walnuts

Great taste from simple ingredients! Light dessert for breakfast in 5 minutes! The recipe is simple and quick, but very tasty. Easy dessert recipe in 5 minutes. All I can say is that it was over very quickly, and I will definitely do it again soon.
Ingredients:
130 g oat flakes(gluten free) (1 1/2 cup)
240 ml hot water (1 cup)
leave to soak for 5 minutes
2 eggs
30 g(2 1/2 tbsp) sweetener(stevia/or your choice)
1 tsp vanilla extract
120 g yogurt (1/2 cup)
50 g melted and cooled butter(1/4 cup)
1 apple
80 g blueberries (2.5 oz)
7 g baking powder (1/2 tbsp)
20 x 8 cm baking form(7.9 x 3.1 inch)
bake for 50 minutes at 180°C/ 360°F

2️⃣ 00:01:01 - In a large mixing bowl, stir together flour, wheat flour, salt, baking soda, baking powder, and cinnamon.
3️⃣ 00:01:25 - Pour in applesauce, honey, egg, and vanilla extract until combined.
4️⃣ 00:02:10 - Use a rubber spatula to fold in grated zucchini. Transfer to the prepared pan.
