How To make Orange Almond Cheesecake
Crust: 1 1/2 cups graham cracker crumbs
1 cup unblanched almonds
coarsely ground
1/4 cup sugar
6 tbsps. sugar
Filling: ]4 eggs 1 cup sugar
1 1/2 lbs. cream cheese
2 tbsps. amaretto
2 tbsps. Cointreau or Grand Marnier
10 tbsps. freshly squeezed orange juice
1 tsp. pure vanilla
Topping: 1 tsp. gelatin
1/4 cup lukewarm water
1 1/2 cups whipping cream
1 tbsp. sugar
1/4 tsp. pure vanilla
2 tbsps. Cointreau or Grand Marnier
To make crust, combine ingredients and pat and spread over bottom and up sides of a 9" springform pan. Chill for 30 minutes.
To make filling, preheat oven to 350 degrees. Beat eggs and sugar until fluffy. Beat in cream cheese, then add Amaretto, Cointreau, orange juice and vanilla. Beat until well blended. Pour into chilled crust and bake for about 60 minutes or until filling is set. Allow to cool for about one hour before adding topping.
To make topping, dissolve gelatin in water and allow to cool to room temperature. Whip cream with sugar until stiff. Quickly whisk in vanilla, Cointreau and dissolved gelatin with a rubber spatula. Spread topping evenly over cake. Chill 4 to 6 hours.

Ingredients材料:

6 Egg whites (蛋白)
90g Caster sugar (细砂糖)
【B】
250g Cream cheese (乳酪)
60g Butter (奶油)
50g Caster sugar ( 细砂糖)
100g UHT dairy Whipping Cream (动物性鲜奶油)
100ml orange juice (鲜橙汁)
6 egg yolks (蛋黄)
60g Plain flour (面粉)
30g Corn flour (sifted) (粟米粉 (过筛))
1 orange,grated rind (粒橙,皮磨碎)
Steps
1. Double boil ingredients (B), whisk till it is smooth and set it aside.
2. Use medium speed to beat ingredients (A) till soft peaks are formed. Fold lightly into No.1 mixture, mix till well combined and pour into the 9 mould.
3. Bake in water bath at 150°C for 90 minutes or until the centre is set and golden brown.

Biscuits 15 to 20 Nos ( Gram Crackers or any other biscuit)
Butter 4 tbsp melted (1/4 cup or 57 g)
Cream Cheese 800 g (3 Cups )
Sugar 1 Cup (200g)
Egg 4 Nos
Vanilla Extract 1 tsp
Bake over a water bath at 350 F / 180 C for 1 hr
If you do not have cream cheese , this is how to make at home.
1 liter whole milk
2 teaspoons salt
4 tablespoon lemon juice or white vinegar
In a saucepan, heat the milk on medium heat, stirring gently .One the milk start to boil reduce heat and Add lemon juice one tbsp at a time while stirring the milk . When The milk curdles strain it , add salt and blend it to a cream consistency.
In this video I am using cream cheese spread which always gives me lighter and creamier textured cake.

Filling ingredients:
1 (.25oz) envelope unflavored gelatin
1 cup boiling water
8 ounces softened cream cheese
granulated sugar substitute = 1 cup of sugar
1 1/2 cups heavy cream
1 1/4 tsp orange flavoring
Zest of one medium orange
1 drop yellow food coloring
1 drop red food coloring

Hello everyone, in today's video, I'll be showing you how to make a delicious no-bake orange cheesecake. This creamy and tangy cheesecake is the perfect dessert for any occasion, and it's incredibly easy to make!

Ingredients:
200gm cookies
100gm unsalted butter,softened
homemade cookies recipe
400gm cream cheese, softened
100gm powdered sugar
150gm cup heavy cream
1 tbsp orange zest.
100gm curd.(yogurt)

Gelatin 10gm
Water 40ml

Orange jelly layer:
100ml orange juice
50gm sugar
10gm gelatin
40ml water

Instructions:
In a mixing bowl, combine the cookie crumbs and melted butter Mix well until the mixture resembles wet sand.
Press the mixture into the bottom of a 6-inch springfarm pan or ring pan , using the back of a spoon or a flat-bottomed glass to create an even layer. Place the pan in the refrigerator to chill while you prepare the filling.
In a large mixing bowl, add the softened cream cheese, heavy cream , yogurt, powdered sugar, orange zest, and gelatin. Beat until the mixture is smooth and well combined.
Pour the filling over the chilled crust and smooth the top.
Cover the cheesecake with plastic wrap and refrigerate for at least 3 hours or until the cheesecake is set.

Instructions:
Juice the oranges and strain the juice to remove any pulp or seeds. You should get 100ml of juice.
In a small bowl, sprinkle the powdered gelatine over the cold water and let it sit for a few minutes to bloom.
In a saucepan, combine the orange juice , granulated sugar and gelatin over medium heat. Stir until the sugar dissolves.
Once the sugar and gelatin has dissolved in the orange juice, remove the saucepan from the heat.
And add 2-3 drops of orange food color ( optional)
Pour the mixture over the cheesecake and refrigerate until set (about 2-4 hours)
Enjoy your delicious no-bake orange cheesecake!
