How To make Baci Di Dama( Orange Almond Cookies )
1 cup ground blanched almonds
1/2 cup sugar
1/2 cup minced candied orange peel
1 cup all-purpose flour
sifted
6 tbsp milk :
(6 to 8)
1/2 cup semi-sweet chocolate pieces -- melted
Put the ground almonds in a bowl with the sugar, orange peel and all but 1 tbsp of the flour. Mix well, then stire in enough milk to give a smooth, firm dough.
Roll into small balls and place, well apart, on a baking shet lined with greased wax paper. Sprinkle with the remaining flour, and bake in a preheated moderate oven 350 degrees, for 15 minutes or until golden brown.
Transfer to a wire rack to cool. When cold, sandwich the cookies together in pairs with the melted chocolate. Chill in the fridge for1 hour before serving.

Chocolate and Orange Hazelnut Cookies

Ingredients
1 cup chocolate-hazelnut spread
2/3 cup cake flour
1 tablespoon orange zest and 1 tablespoon orange juice (from 1 orange)
1 large egg
1/4 teaspoon kosher salt
1/2 cup hazelnuts, roughly chopped
Directions
Preheat the oven to 350 degrees F and line 2 rimmed baking sheets with parchment paper.
Add the chocolate-hazelnut spread, flour, orange zest, orange juice, egg and salt to a large bowl. Using a hand-mixer, beat on medium-high until thoroughly combined. Fold in the hazelnuts by hand.
Use a 1 tablespoon size ice cream scoop to scoop balls of the cookie dough straight onto the prepared baking sheets, keeping them 2-inches apart. Bake until the edges are set but the tops are still slightly soft, 13 to 15 minutes
Let the cookies cool for 10 minutes on the baking sheets before transferring them to a wire rack to cool completely.

300g almond flour, divided
100g confectioner’s sugar (powdered sugar) (¾ cup)
Zest of 1 orange
Juice of 1 orange
15ml honey (1 tablespoon)
1 egg white
2.5 ml (½ teaspoon) almond extract
Confectioner’s sugar

.Les Baci di Dama sont des biscuits croquants sans œufs composés de deux coques à la noisette et amande puis d’une Ganache dite Gianduja (chocolat + noisette du Piémont).
.2 Conseils : ne travaillez pas trop la Pâte et respectez bien les temps de repos.
.Avec cette recette vous allez obtenir une trentaine de biscuits.
