How To make Old Fashioned Pineapple Upside Down Cake
3 cn 8 1/2 oz size sliced pine-
Apple in heavy syrup (12) 1/4 c Butter
2/3 c Light brown sugar, packed
1 c Unsifted flour
1/3 c Pecan or walnut halves
3/4 c Sugar
1 1/2 t Salt
1/4 c Shortening
1/2 c Milk
1 Egg
1 c Heavy cream, chilled
Preheat oven to 350F. Drain the pineapple slices, reserving 2 T syrup. In a heavy cast iron frying pan (10"), melt the butter over medium heat. Add brown sugar, stirring until the sugar is melted. Remove from heat, and arrange 8 of the pineapple slices on the sugar mixture, overlapping the slices slightly around the edge of the pan. Put one slice in the center. Place the walnut or pecan halves in the center of each slice of pineapple. Arrange around the inside edge of the skillet the remaining pineapple, cut in halves. Put pecans or walnuts in the center. In a medium bowl, mix the flour, sugar, baking powder, and salt.Add shortening and milk. Beat 2 minutes at high speed or until mixture is smooth.Add egg and reserved 2 T of syrup. Beat 2 minutes longer. Gently pour cake batter over pineapple in skillet. Spread evenly being careful not to disarrange the pineapple. Place on center rack of oven and bake 40-45 minutes, or until cake springs back to light touch. After the cake is done, let the skillet stand on a wire rack 5 minutes to cool just slightly, and then loosen edges with a small spatula. Place serving platter over the cake, and turn upside down. Shake gently, and lift off skillet. Serve with 1 cup heavy cream whipped.

A time when canned pineapple was all the rage. One look at this cake and you can see why it was so popular. It is lovely, glistening slices of sweet and sticky caramelized pineapple sitting happily on top of a fluffy white butter cake.

Old Fashion Pineapple Upside Down Cake
This is the original recipe from the early 1950's. My mother and grandmother made this exact recipe many years ago. It is a very rich cake and best if served warm from the oven. This recipe always called for canned pineapple because fresh pineapple was almost never available in the supermarkets back then.

Greetings! I uploaded a video for Pineapple Upside Down Cake about 2 years ago as part of my The Holidays are Coming series. It is one of my most popular recipe videos of all time. But, because it has Christmas music in the intro, I thought I would update the video for everyone and make it more every day instead of holiday.
That being said, because when I upload this video it is two days before Easter. Good Friday to be exact. and this is the perfect cake to take to a family gather, friend's house or picnic in celebration of the spring holiday.
This recipe comes from my Mother's recipe box. She has never made this any other way and I have not altered it one bit. It is perfect just the way it is.

For the Brown Sugar Topping:
1/2 cup Unsalted Butter
1 cup Brown Sugar
2 tbsp Heavy Cream
1/2 tsp Flaky Sea Salt
6 slices Pineapple
6 Maraschino Cherries without stems
For the Cake:
2 and 3/4 cup Cake Flour
3 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Salt
1 and 1/2 cups granulated Sugar
1/4 tsp Ground Cinnamon
3 large Eggs at room temperature
1/2 cup Milk at room temperature
1/2 cup Sour Cream at room temperature
1/2 cup Pineapple Juice
1/2 cup Vegetable Oil
1 tbsp Vanilla Extract
