How To make Mom's Pineapple Upside Down Cake
CAKE:
1 1/2 c Butter (3 sticks), divided
6 lg Eggs, separated
1 1/2 t Baking soda
1 1/2 c Buttermilk, with
-pineapple juice 1 t Vanilla extract (or more)
1/2 t Salt
1 c Sugar, granulated
2 1/2 c Confectioner's sugar (4x)
2 1/2 c Flour
TOPPINGS:
Pineapple rings Maraschino cherries Pecan halves SYRUP:
2 c Light brown sugar (1 box)
1/2 c Butter
2/3 c Water
2 T Karo
Grease 3 cast-iron skillets. Drain pineapple rings, reserving juice. Add all but 1 tablespoon of the juice to the buttermilk to make 1 1/2 cups fluid (equal parts, if possible). Separate eggs; place all the whites in a large bowl, place 3 yolks in one small container, and the other 3 in another. Prepare 3 8-inch cake pans with brown-paper rounds (for bottoms) greased with shortening. Preheat oven to 350 degrees F. Soften 1/2 C butter in a large bowl; add confectioner's sugar and beat until thoroughly mixed. Add 3 egg yolks, one after another, and continue beating. Add vanilla and mix till thoroughly blended, scraping sides with spatula if necessary. Measure flour into a small bowl and stir in baking soda. Add to butter/sugar mixture alternately with buttermilk in 4 steps, beginning and ending with the flour. Sprinkle about 1/2 t salt on egg whites. Beat till stiff, but not dry. Fold egg whites into batter. TOPPING: Melt butter in large skillet over medium heat; add 1 T of pineapple juice and the sugar. Add water and Karo and cook at a high, rolling boil for about 3 minutes. Pour equally into prepared cast-iron skillets (about 1/2 to 3/4-inch thick). Place pineapple rings in bottom of each skillet, and in the centers, place a cherry. (Can add pecan halves, too.) Divide batter between pans and bake at 350 degrees F. about 30-35 minutes, until done.

Pineapple Upside Down Cake Simple and Easy
Pineapple upside down cake is so delicious. We have simplified it so much that you can make it in about an hour. If you have fresh pineapple by all means use it, but we simple use the rings you can buy in the can. They fit perfectly into a 9 inch cake pan. As always, you can alter the recipe according to your liking. For example if you want it a little sweeter, add more sugar. If you're diet conscious, add a little less.

Due to the simplicity of the recipe, it's great when friends suddenly show up for dinner. The kids will love it as well. It keeps nicely for a few days. I never put mine in the fridge as the edges tend to get hard. Simply leave it covered on the counter at room temperature. Watch the video and let us know what you think.

Pineapple Upside-Down Cake Recipe
This cake is soft and buttery with caramelized pineapple slices and cherries. You can use either fresh or canned pineapple. Fairly quick recipe to make right before serving as it's better when warm. Warm up any leftovers in the microwave for 30 seconds.

Pineapple Upside Down Cake - Mom’s Famous Recipe
Pineapple Upside Down Cake
Preheat over to 350
Use 1 yellow cake box (any brand)
Follow cake instructions
Tip: My mom substitutes oil for butter and pineapple juice for water from cake mix recipe
Prepare cake mix batter & put it a side
Place a 13 x 9 inch cake pan over low heat on the stove and melt one stick of butter. As the butter melts add 1 cup of brown sugar and stir butter & brown sugar over low heat until well mixed.
Place pineapples from a can into cake pan. Add Maraschino cherries in the center of pineapples (optional)
Pour cake batter over pineapple mixture. Bake at 350 for 35 mins until golden brown Let cool 30 mins. Place a large plate or tray on top of cake pan and flip over
Pineapple Upside Down Cake for Two | Small Batch Dessert
A fluffy cake topped with a pineapple ring, cherry and a ooey, gooey brown sugar topping for Two perfectly sized individual pineapple upside down cakes.
Ingredients:
2 Tbsp butter, salted, melted and divided
2 Tbsp brown sugar
1/3 cup of flour
3 Tbsp sugar
1/2 tsp baking powder
1/8 tsp salt
1/2 tsp vanilla extract
1/2 tsp almond extract
1/4 cup buttermilk
2 pineapple rings
2 maraschino cherries
Preheat oven to 350 degrees F.
Place 1/2 Tbsp melted butter into each of two 7 oz ramekins.
Add 1 Tbsp brown sugar to each ramekin.
Put one ring of pineapple into each dish.
Add cherry in middle of pineapple ring.
In a bowl, combine flour, sugar, baking powder, salt, 1 Tbsp melted butter along with vanilla and almond extract and buttermilk.
Stir to combine.
Pour half of batter over each pineapple slice.
Bake for 20 minutes or until a toothpick comes out clean.
Let sit for a few minutes, run a fork around the edge of cake and then turn out onto a plate.
