- 50g Sugar

- 50g Cake flour

- 10ml Milk

- 10g Cooking oil

- Hot water

- Bake at 150℃ for 50 minutes

Ingredients
#Chocolate cake
- 50 gram dark chocolate
- 80 ml vegetables oil
- 3 eggs
- 3 ml vanilla extract
- 90 gram sugar
- 70 gram all purpose flour
- 25 gram Cocoa powder
- 2 gram baking powder
Bake the cake at preheated oven 165°C for 25 minutes
# Milk pudding
- 500 ml milk
- 100 ml whipping cream
- 100 gram condensed milk
- 2 eeg Yorks
- 7 gram agar powder
# Chocolate Pudding
- 500 ml milk
- 10 gram cocoa powder
- 15 gram Instant Coffee
- 120 gram condensed milk
- 1 egg york
- 7 gram agar powder

The Fudgiest, Greatest Chocolate Cake
One of my all time favorites, this is my moist, fudgy, and completely from-scratch chocolate cake recipe. It comes together in one bowl and pairs well with any frosting!
Recipe:
Ingredients
1 ⅔ cup all-purpose flour (208g)
1 cup brown sugar firmly packed (200g)
1 cup sugar (200g)
¾ cup natural cocoa powder (75g)
1 ½ teaspoon baking soda
¾ teaspoon salt
½ cup unsalted butter melted (113g)
½ cup neutral cooking oil avocado, canola, or vegetable (118ml)
2 large eggs + 1 egg yolk, lightly beaten room temperature
2 teaspoons vanilla extract
1 cup buttermilk¹ (236ml)
½ cup hot coffee² (or 1 teaspoon instant coffee dissolved into ½ cup hot water) (118ml)

00:00 Introduction
00:14 Preheat oven to 350F (175C) and prepare two deep 8 round cake pans⁴ by lining the bottoms with parchment paper and lightly greasing and flouring the sides. Set aside.
00:18 In the bowl of a stand mixer fitted with a paddle attachment, whisk together flour, sugars, cocoa powder, baking soda, and salt.
02:24 Add melted butter and oil, stir well.
03:29 Add eggs, egg yolk, and vanilla extract and stir until well combined. Pause occasionally to scrape sides and bottom of bowl.
04:43 Gradually add buttermilk and stir well.¹
05:50 Add hot coffee, stirring until ingredients are well-combined (be sure to scrape sides and bottom of bowl again).²
07:05 Evenly divide batter between prepared pans. Bake on 350F (175C) for 35-40 minutes (toothpick inserted in center should come out with moist crumbs).
08:15 Allow to cool for 15 minutes before inverting onto cooling rack to cool completely before frosting.
08:30 Spread a thick layer of frosting over the top of one cake round. Top with second cake round and evenly frost cake. Slice and serve.

¹If you don't have buttermilk on hand, please see my post on making an easy buttermilk substitute!
²You can substitute with hot water if you don't have coffee, but do make sure it is hot! See the post for more information on why I use coffee and why it is important that the liquid be hot.
³I used my favorite chocolate frosting for this recipe, but here are some other frosting options you might like to try out:

⁴You can use 9 pans instead, but the cakes will need to bake for less time. I'd start checking the cakes at 27/30 minutes. Please keep in mind that if your pans are dark-colored the cake may also need less time to bake.

Impossible Cake It's not Impossible
This week I teach you how to make an Impossible cake or you might have heard of it as Coco-Flan. It sounds impossible, and has lots of layers. But it’s not impossible. I give you the step-by-step, and you will see my 9 month old daughter, Elle, helping me. This cake has a layer of dulce de leche, chocolate cake, and then topped with flan. Yes, Flan! Wait, did I tell you a magic show happens when you place this cake into the oven. The flan and chocolate layer invert. Yes, they move while baking! It’s crazy awesome!

Ingredients:
softened butter to coat bunt pan and flour
1 cup dulce de leche
For the cake:
3/4 cup butter, softened
1 cup sugar
1 whole egg
3/4 cup Gold Medal flour
1 cup cake flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/3 cup plus 2 tablespoons cocoa powder
1 teaspoon ground cinnamon
1 cup plus 2 tablespoons buttermilk
For the flan:
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) can evaporated milk
4 whole eggs
1 teaspoon vanilla extract
1 teaspoon coconut extract
For garnish: Optional
1 cup dulce de leche
1/2 cup finely chopped pecans
Preheat oven to 350 degrees F and position oven rack to the middle. Generously butter a 10-inch Bundt pan and sprinkle with flour or use Baker's Joy cooking spray. Tip the pan and tap out excess flour. Warm the dulce de leche a little bit to soften it and pour it over the bottom of pan to coat evenly.For the cake: In a large bowl, beat the butter and sugar with an electric mixer at medium-high speed until light in color. Scrape the bowl. Beat in the egg. Sift together the flour, cake flour, baking powder, baking soda, cinnamon, and cocoa. With the mixer on medium-low, beat in about 1/2 of flour mixture, followed by 1/2 of buttermilk. Repeat. Scrape bowl, then raise the speed to medium-high and beat for 1 minute. Pour batter into the Bundt pan and spread evenly.For the flan: In a blender combine the sweetened condensed milk and evaporated milk, the eggs and both extracts. Blend until smooth.Slowly pour the flan mixture over cake batter. Pull out the oven rack, set the cake into larger pan, then set both pans on rack. Pour 6 cups of hot water around the cake. Carefully slide the pans into the oven and bake for about 50 to 55 minutes or until a toothpick comes out clean. Remove from the water bath and cool at room temperature for 1 hour.Refrigerate cake for several hours or overnight. Carefully run a thin bladed knife around the edge of the cake to free the edges. Invert a rimmed serving platter or large plate over the cake pan, grasp the two tightly together, then turn them upside down. Gently jiggle the pan back and forth and let the cake release and drop.Drizzle the reserved cup of dulce de leche over the cake and sprinkle with pecans. Slice and serve.
