Butter-flavor no stick -cooking spray 1 1/3 c Granulated sugar, divided
1 c Unsifted all-purpose flour
1/4 t Salt
1/2 c Unsweetened cocoa, divided
2 t Baking powder
pn Cinnamon 1/4 c Canola oil
1/2 c 1% low-fat milk
1 t Vanilla
2 t Espresso coffee powder or
-regular or decaffeinated -coffee powder 1 c Boiling water
Position a rack in the center of the oven and preheat it to 350'F. Coat the baking pan with cooking spray. In a large bowl, combine 2/3 cup of the sugar, the flour, salt, 1/4 cup of the cocoa, baking powder and cinnamon, and stir well to blend. Whisk in the oil, milk and vanilla. The batter will be stiff. Scrape the batter into the prepared pan and smooth the top. In a small bowl, stir together the remaining 2/3 cup sugar and 1/4 cup cocoa. Sprinkle evenly over the cake batter. Dissolve the coffee powder in the boiling water and pour it over the batter. Do not stir. Bake for about 25-30 minutes, or until the top of the cake looks crisp and crackled, and a cake tester inserted in a "cakey" area comes out clean. Cool on a wire rack for about 5 minutes. Serve warm from this baking pan. Nutritional analysis: 342 calories, 4 grams protein, 10 grams fat, 0.8 saturated fat, 64 grams carbohydrate, 215 milligrams sodium, 1 milligram cholesterol; calories from fat: 25 percent.

This chocolate pudding recipe is eggless, no-bake and really easy to make. Layers of biscuits dipped in milk and rich chocolate custard. This no-bake chocolate cookie cake is so simple that you can prepare it with your kids. If you like coffee flavors in your desserts, you can dip the biscuits in coffee, if you don’t like coffee you can dip just in milk.

Ingredients:
30-40 Biscuits/cookies
3 cups (720ml) Milk, divided
1 cup (240ml) Heavy cream
1/2 cup (100g) Sugar
2 tablespoons (15g) Cocoa powder
160g (6.4oz) Dark chocolate
1/3 cup (43g) Cornstarch (corn flour)
1 cup (240ml) Milk
1 tablespoon coffee (optional)
Directions:
1. In a small bowl whisk 1/2 cup milk (120ml) with the cornstrach until no lumps. Set aside.
2. In a saucepan place the remaining milk, heavy cream, sugar, cocoa powder and heat until sugar is melted. When sugar is melted and the mixture is simmering, reduce to medium-low heat, pour in milk-cornstrach mixture and stir until thickens. Turn the heat off and add chopped chocolate, stir until melted. Set aside.
3. Dip the biscuits in the milk/coffee and arrange in the bottom of 13X9 (32X22cm) dish. Spread 1/3 of the chocolate cream over the biscuit layer. Then arrange another layer of dipped biscuits. Spread another 1/3 of cream over the biscuits. Arrange last (third) layer of dipped biscuits on top and spread the last layer of chocolate cream.
4. Cover and refrigerate for at least 4 hours.
5. Before serving shave some chocolate on top.

3 tbsp cornstarch

Mocha Pudding Cake
Yields: 6 to 8 servings
Ingredients:
1 cup flour
1 ½ tsp. baking powder
¼ tsp. salt
1 cup sugar, divided
6 tbsp. unsweetened cocoa, divided
½ cup milk
3 tbsp. vegetable oil
1 tsp. vanilla
½ cup mini semi sweet chocolate chips
1 cup strong coffee
Preparation Directions:
~ Combine flour, baking powder, salt, 2/3 cup sugar and 4 tbsp. cocoa powder in a large bowl. In a small bowl stir together milk, oil, and vanilla; add to dry ingredients, stirring until just blended. Spread batter into a lightly greased 8-inch baking pan.
~ Combine chocolate chips, 1/3 cup sugar and 2 tbsp. cocoa powder. Sprinkle over batter. In a saucepan bring coffee to a boil; pour evenly over batter.
~ Bake at 350 degrees for 25 to 30 minutes or until cake springs back when lightly touched in the center.
~ Serve warm with ice cream.

To Make Coffee Pudding
Biscuit - 6 Nos
Ghee
Full Cream Milk - 1/2 Litre
Coffee Powder - 2 1/2 Tbsp
Vanilla Essence - 1/2 Tsp
Cinnamon Powder - 1/2 Tsp
Sugar - 1/3 Cup
Corn Flour Slurry
Method:
1. Grind the digestive biscuits into fine powder, mix it with ghee and keep it aside.
2. Boil the milk in a pan until it is half and add the coffee powder. Boil for a while.
3. Add Vanilla essence, cinnamon powder and sugar. Mix well and keep boiling.
4. Mix corn flour and water in a bowl for corn flour slurry.
5. Mix the corn flour slurry with milk and keep mixing. Cook for another 3 mins.
6. Once the milk mixture is thick enough, turn off the stove and keep it aside.
7. For assembling, first put the powdered biscuits in the bottom of the glass and gently press it in.
8. Pour in the milk mixture and let it cool down.
9. Once the milk comes down to the room temperature, refrigerate it for 1 hour.
10. Garnish it with chocolate shavings.
11. Serve the gorgeous coffee pudding immediately and enjoy!
