How To make Persimmon Pudding Cake
CAKE:
2/3 c Sugar
1/3 c Corn oil
1 c Sifted unbleached flour
1/4 ts Salt
1 ts Cinnamon
1/4 ts Nutmeg
2 ts Baking soda
2 ts Warm water
2 Very ripe persimmons,
-finely diced 3 tb Brandy
1 ts Vanilla
1/2 c Liquid egg substitute
1/2 c Seedless raisins
1/2 c Chopped walnuts
TOPPING, OPTIONAL:
1 c Part-skim ricotta cheese
3 tb Plain nonfat yogurt
3 tb Sugar
1 ts Vanilla extract
1 tb Brandy
Stir together sugar and corn oil. Sift together the flour, salt, cinnamon and nutmeg; add to the sugar and oil. (The batter will be stiff and crumbly so far.) Dissolve the baking soda in the warm water and add to the batter. Mix the persimmons, brandy and vanilla together in a separate bowl then add to the batter. Add the egg substitute, mixing thoroughly but lightly. Add the raisins and nuts; stir until mixed. Pour batter into a loaf pan lined with foil and sprayed with nonstick vegetable coating. Bake in a pre-heated 350-degree oven for about 45 minutes, or until a toothpick inserted in the center comes out clean. Pull the pudding cake out of the pan by the foil and cool. Serve each slice with 1 tablespoon topping, if desired. Makes 16 slices. TOPPING: Blend all ingredients in a food processor with a metal blade until satin smooth. Refrigerate in a tightly covered container. Makes 1 cup.

Persimmon Cake Recipe at home : How to make persimmon cake easy and southern living method
Hello and welcome to Dessert Planet channel. In this dessert tutorial you learn how to make Persimmon Cake at home by your own. Persimmon is a very tasty and useful fruit that in this dessert recipe you can simply prepare this delicious persimmon cake and enjoy it by using flour, eggs and walnuts. You can also use pistachio kernels and coconut powder to decorate persimmon cake. Persimmon cake is very popular in southern living.
INGREDIENTS
2 cups of flour
2 teaspoon of baking powder
1 teaspoon of cinnamon
4 number of eggs
1 cup of sugar
Half teaspoon of vanilla
Half cup of liquid oil
A glass of persimmon puree
Persimmon Cake Recipe:
Sift the flour, baking powder and cinnamon three times and set aside.
Beat eggs, sugar and vanilla on high speed for five minutes until creamy and thick. Add persimmon oil and puree and stir until mixed.
Add the flour mixture in three steps and stir gently with a hand mixer until it is mixed and the cake is smooth. Finally, add as desired. Grease the mold well and pour the icing into the mold.
Bake in a preheated oven at 180 degrees for about 45 minutes. When the cake is completely cooled, remove from the pan.

Persimmon pudding
Harvesting persimmons, making the pulp, then mixing, baking, and tasting the pudding. These are wild American persimmons, Diospyros virginiana. These American persimmons are quite different from Asian persimmons. This video was made in mid-October in the foothills of the Blue Ridge Mountains in North Carolina, where these trees are common.
STEAMED PERSIMMON PUDDING // Delicious Persimmon Dessert Recipe for the Holiday Season
Welcome to Mimicita's Kitchen! Persimmon season is typically September through late November.
Ingredients you will need for steamed persimmon pudding:
3 medium-sized ripe persimmons
2 tsp baking soda
1/2 cup of butter
1 cup of sugar
2 eggs
1 tsp lemon juice
2 tsp vanilla extract
2 Tblsp sherry or brandy
1 cup of flour
2 tsp of cinnamon
1/4 tsp of salt
1 cup raisins
1/2 cup chopped walnuts
Also will need 2 quart pudding mold, rack, and large pot for steaming.
Steam for 2.5 hours, let cool for 10 minutes and unmold.
