Peaches & Melted Ice Cream with Pound Cake
Guest appearance with Averie to assemble a sweet treat.
Two pound cake slices, dipped in an egg, milk and nutmeg mixture, then grilled. Next sliced peaches are lightly sugared and sprinkled with cinnamon. As the dessert is layered, drizzle with a blend of melted French vanilla ice cream mixed with raspberry preserves. All I can say is WOW!

Grilled Pound Cake with Fresh Fruit Salad
A dessert that is just right for mom on Mother's Day
Ingredients:
4 thick slices pound cake
1 peach, chopped
12 strawberries, chopped
1/2 of a mango, chopped
1 lemon, cut in half
1 tablespoon honey
1 teaspoon minced lemon thyme, optional
Directions:
Preheat grill.
In mixing bowl, toss chopped peach, strawberries and mango together.
Put honey in a small bowl.
Place pound cake slices directly on rack of hot grill. Leave it long enough to get golden grill marks and then carefully flip each slice over. Place lemon halves on grill, cut side down. Leave the lemons long enough to get heated with some golden grill marks on the cut side.
Remove grilled pound cake to platter.
Squeeze juice from lemon halves into honey in the small bowl. Mix together. Add lemon thyme and mix. Pour honey mixture over fruit in bowl.
Place a slice of grilled pound cake on dessert plate. Top with a dollop of whipped cream and some fruit salsa. Repeat for remaining slices of pound cake.
Sliced basil is also good mixed into the salsa. Or, how about pineapple sage?
Sue's Tips:
Use frozen pound cake purchased from store or your own favorite homemade pound cake.
Use any of your favorite fresh fruits in the salsa.
I like to mix whipped cream with prepared instant vanilla pudding and spoon it over the pound cake before topping with the fruit salsa.
