3/4 cup olive oil 3/4 cup dill pickle liquid 1/3 cup sliced dill pickles 1 clove garlic
minced 3 pounds beef top round :
1 1/2--2" thick salt and pepper Combine olive oil, pickle liquid, sliced pickles and garlic in large shallow dish. Add meat and turn until coated. Cover and marinate overnight, turning meat once. Remove meat to grill or broiler rack reserving marinade. Cook 6 inches from source of heat for about 14 to 17 minutes per side for medium doneness. Brush meat with additional marinade during grilling and sprinkle each side with salt and pepper after grilling. (If cooked in broiler, catch pan juices and pour over meat before serving.) Cut meat diagonally across grain into thin slices. Makes 8 servings.

A delicious and easy recipe for making Reverse Sear Steaks topped with a Lemon Dill Crab Sauce.

Ingredients: Steaks of your choice 8oz of fresh blue crab meat 8 tablespoons of unsalted butter 1 tablespoon of fresh squeezed lemon juice ¼ cup of good white wine ¼ teaspoon of white pepper ¼ teaspoon of kosher salt Cracked black pepper to taste 3 tablespoons of heavy cream 1 teaspoon of fresh dill herb, or dill paste Cayenne pepper (for steaks)
Instructions: Season steaks with kosher salt, cracked black pepper, and cayenne pepper, allow steaks to come up to room temperature before grilling. To do a reverse sear, place the steaks on indirect heat until the internal temperature reaches 115 degrees, at this point sear the steaks on both sides for around 3 minutes on each side. Wrap steaks in foil to let them rest while making the crab sauce.
Now take an all metal pot and put over direct heat on grill or stove top, and melt in 1 tablespoon of butter, then add in 1 minced shallot, and cook in butter until tender. Now mix in 1 tablespoon of fresh lemon juice, ¼ cup of white wine, and let reduce for around 5 minutes to let the alcohol from the wine burn off. Now add in 3 tablespoons of heavy cream, ¼ teaspoon of kosher salt, cracked black pepper to taste, and ¼ teaspoon of white pepper. Now add in additional 7 tablespoons of unsalted butter, and mix well. Now add in 1 teaspoon of fresh dill herb, or 1 teaspoon of fresh dill paste as I show in the video. To finish the sauce add in 8 oz of fresh blue crab meat (Canned crab will work also), and simmer for 3 minutes.
Plate the steaks, and top with the crab sauce. Serve with garlic butter French bread toast.
