How To make Steak& Parmesan Grilled Vegetables
2 t-bone or porterhouse steak
1" thick
1/4 cup Parmesan cheese :
grated
2 tablespoons olive oil
2 tablespoons red wine vinegar
2 red or yellow bell peppers quartered
1 large red onion cut crosswise into 1/2" slices
Seasoning: 1 tablespoon garlic :
crushed
2 teaspoons basil leaves -- dried
1 teaspoon pepper
Make sure your steaks are well trimmed of fat.
1. In a small bowl, combine seasoning ingredients; mix well. Reserve 4 teaspoons seasoning; press into both sides of beef steaks.
2. Add cheese, oil and vinegar to remaining seasoning, mixing well; set aside.
3. Place steaks in center of grid over medium ash-covered coals; arrange vegetables around steaks. Grill steaks uncovered 14 to 16 minutes for medium rare to medium doneness, turning occasionally. Grill peppers 12 to 15 minutes and onion 15 to 20 minutes or until tender, turning once. Brush vegetables with reserved cheese mixture during last 10 minutes of grilling.
4. Season steaks with salt, as desired. Remove bones. Carve steaks crosswise into thick slices. Serve with vegetables.

Grilled Veggie & Steak Salad
RECIPE:
Grilled Veggie & Steak Salad
Servings: 2
INGREDIENTS
Vegetable dressing:
½ cup red wine vinegar
½ teaspoon pepper
¼ teaspoon salt
1 teaspoon oregano
2 cloves garlic
¼ cup olive oil
1 zucchini
1 summer squash
1 small red onion
1 red bell pepper
1 yellow bell pepper
1 ½ pound rib eye steak
Salt, to taste
Pepper, to taste
1 bag mixed greens salad
Salad dressing:
Olive oil, to taste
Red wine vinegar, to taste
Salt, to taste
Pepper, to taste
PREPARATION
1. Cut zucchini and summer squash in half lengthwise. Remove the insides of the bell peppers and cut into large chunks. Remove the top and bottom from the red onion and slice horizontally into three pieces.
2. Combine red wine vinegar, pepper, salt, oregano, and garlic. Whisk in the olive oil and coat vegetables in the dressing.
3. Season the rib eye with salt and pepper.
4. Grill steak over medium-high heat for 5-7 minutes on each side. (Times may vary depending on the grill and how well-done you like your steak).
5. Add the vegetables to the grill and cook the zucchini and summer squash for 5-7 minutes on each side. Cook the bell peppers and onions 4-6 minutes each side. (Times may vary depending on the grill)
6. Remove steak from the grill and let rest for 10 minutes.
7. Cut vegetables into bite-size pieces and slice the steak into strips.
8. Arrange vegetables and steak on a bed of mixed greens.
9. Drizzle olive oil, red wine vinegar, salt, and pepper over the salad.
10. Serve & enjoy!

This is a simple formula that can be replicated with any of your favorite vegetables and added to grilled chicken or fish!
I think we can all agree that simple meal preps are the best ????
Here’s how @mealprepmondays did it on his @pitbossgrills Onyx Edition Savannah:
Ingredients:
Asparagus
Carrots
Bell Peppers
Bok Choy (optional*)
Green Cabbage
Olive Oil
Salt + Pepper
Paprika
Directions:
1. Pre heat your grill to 375°.
2. Chop all of your vegetables and place them onto foil pans, keeping the cabbage in a separate container.
3. Drizzle olive oil over the vegetables and season with salt and pepper. Season the cabbage with paprika.
4. Place the vegetables on the grill and close the lid. Let everything cook for about 20 minutes and then pull off the carrots and asparagus.
5. Let the bell pepper and cabbage continue cooking for about 10-15 minutes.
6. Once everything is off, let it cool and then disperse into meal prep containers and serve with your favorite protein!
7. Enjoy!
