Beef Stir Fry With Onions And Peppers

Equipment
A wok, skillet, or sauté pan
Ingredients
Stir-fry sauce
3 tablespoons soy sauce, regular or light
1 tablespoon Shaoxing wine sub: Chinese cooking wine, dry sherry, or sake
2 tablespoons oyster sauce
2 teaspoons sugar
1 tablespoon cornstarch
1 tablespoon sesame oil, dark-colored variety
½ cup water
For the stir-fry
1 pound flank steak (see note)
¼ teaspoon baking soda
1 tablespoon cornstarch
1 medium onion sliced into strips
1 medium red bell pepper sliced into strips
3 scallions cut into 2-inch sections
2 teaspoons minced ginger
4 cloves garlic minced
Ground pepper to taste
Neutral-flavored oil for searing and sautéing
Instructions
1. Make the sauce by combining soy sauce, Shaoxing wine, oyster sauce, sugar, cornstarch, sesame oil, and ½ cup of water. Set aside.
2. Slice the meat thinly (about ¼ inch) against the grain or across the muscle fibers.
3. Add 2 tablespoons of stir-fry sauce to the meat and mix them together.
4. Add baking soda and cornstarch. Mix them well, so they are evenly distributed. Velvet the meat for about 15 minutes while you prepare the rest of the ingredients.
5. Set your wok or skillet over high heat. Add a bit of oil to coat the bottom when the pan is almost smoking. Spread the meat in a single layer.
6. Sear for about 2 minutes without touching them. Let the other side brown for another minute. Transfer to a plate.
7. Cook onions and red bell peppers for a minute until slightly blistered. Add scallions and push them to one side. Slightly lower the heat at this point.
8. Add a bit of oil and sauté ginger and garlic for about 30 seconds. Toss them all together.
9. Add meat and sauce to the pan. Let the sauce slightly thicken for about 30 seconds.
10. Add some ground pepper and mix them together. Turn off the heat.

Beef Marinade -
300g (10.5oz) - Rump or Scotch Fillet Steak, Thinly Sliced
1 Tbsp (20ml) - Low Sodium Soy Sauce
Ground White Pepper To Taste
3/4 tsp (3.5g) - Bi-Carb Soda (Bicarbonate of Soda)
1 Cup (100g) - Corn Flour, To Coat
Sweet Chilli Sauce -
2 Tbsp (40ml) - Low Sodium Soy Sauce
1/4 Cup (90g) - Sweet Chilli Sauce
1 1/2 Tbsp (30g) - Tomato Ketchup
1 Tbsp (20ml) - Rice Wine Vinegar
2 tsp (10ml) - Sesame Oil
2 - Garlic Cloves, Minced
Ground White Pepper To Taste
Vegetables -
1 Tbsp (20ml) - Peanut Oil
1 - Brown (Yellow) Onion, Thinly Sliced
1 - Red Bell Pepper (Capsicum), Thinly Sliced
3 - Large Spring Onions (Scallions), Thinly Sliced, Green Stem Used For Garnish
1 Tbsp (10g) - Sesame Seeds, Toasted
Jasmine Rice -
1 Cup (200g) - Jasmine Rice, Washed
1 1/4 Cups (310ml) - Cold Water
3 - Kaffir Lime Leaves (Optional)
Salt To Taste
Garnish -
1 - Long Red Chilli, Thinly Sliced
Notes -
Rice wine vinegar can be substituted for Chinese black vinegar or white vinegar.
This recipe can be served without rice and served on its own. It also works really well with noodles.
This recipe also works with chicken, fish and pork if you don't want to use beef.

Slice Beef Against the Grain:
It’s not just the cut of meat that determines how tender it is, it’s also how you cut the meat. First, find the direction of the grain (which way the muscle fibers are aligned), then slice across the grain rather than parallel with it. By cutting against the grain, we want to cut through the fibers and shorten them, rather than cut in the same direction that they run.

I LOVE this Black Pepper Beef Stir Fry
Black pepper and steak go so well together and in this Chinese takeaway inspired black pepper beef the pepper really lifts the dish and gives a nice background warmth without the need for any chillies. Its tender beef colourfull veggies in a delicious rich savoury sauce.

Ingredients:
Black Pepper Steak:
450 g (1lb) thin steak , sliced thinly, against the grain (I use sirloin)
2 tsp freshly ground black pepper
1/4 tsp salt
4 tbsp sunflower oil
1 tsp sesame oil
2 medium sized onions peeled and chopped into thick slices
1 green bell pepper deseeded and sliced
1 red bell pepper deseeded and sliced
2 tbsp cornflour (cornstarch)
2 tbsp dark soy sauce
2 tbsp oyster Sauce
1 tbsp Chinese rice wine (or replace with dry sherry)
120 ml (½ cup) beef stock
2 cloves garlic peeled and minced
1 tsp minced ginger
To Serve:
Boiled rice or Egg Fried rice
Instructions
1. Toss the steak slices with 1 tsp of the black pepper and the ¼ tsp of salt.
2. Heat 3tbsp of the sunflower oil and the 1 tsp of sesame oil in a wok (or large frying pan) over a high heat until hot, then add the steak.
3. Fry the steak for 2-3 minutes, moving it around the wok so it doesn't stick together, until browned.
4. Spoon out the steak into a bowl, leaving any oil behind in the wok.
5. Turn down the heat to medium. Add the remaining 1 tbsp of sunflower oil to the wok.
6. Add in the sliced onions and sliced peppers.
7. Stir fry the vegetables for 3-4 minutes until starting to soften.
8. Whilst the vegetables are cooking, take a small jug and add the 2 tbsp of cornflour, 2 tbsp dark soy sauce, 2 tbsp oyster sauce, 1 tbsp Chinese rice wine, 120ml (½ cup) beef stock and the remaining 1 tsp of black pepper. Stir together to combine then put to one side.
9. Coming back to the wok, add in the 2 minced cloves of garlic and the 1 tsp of minced ginger to the vegetables. Cook for 1 minute, stirring often.
10. Add in the sauce we mixed in the jug to to the wok and stir together. Let it come to a gentle simmer. If it looks too thick you can add in a splash of water.
11. Add the steak back to the wok and stir through to coat in the sauce. Cook for a further 2 minutes to heat the steak back through.
12. Serve the black pepper beef over boiled rice.
