Ingredients
4 to 5 Roasted Poblano Peppers
1 1/2 cups freshly shredded mozzarella cheese (your choice of cheese)
2 Potatoes sliced potatoes
2 cups Creamy refined beans
Savory sauce (Ingredients listed below)
2 cups shredded chicken (I used 1 large chicken breast that looked more like 2 ????)
3 to 4 Corn tortillas
Tomato Savory Broth
2 Cups Water
1 can (7Oz.) diced Hatch roasted chilis
1/4 - 1/2 Onion
3 Chopped Tomatoes (1 ripe vine tomato and 2 Roma)
2-4 Garlic Cloves
1 Tbs Bouillon (If more is needed start with 1/4 Teaspoon extra at a time)
1/2 Tbsp Mexican Oregano
1-2 Tbsp Oil
Cilantro to taste (8-10 stems)
1/4 cup Tomato Sauce (Optional)
Creamy beans
Oil
1/4 cup water or bean broth
2 Cups pre-cooked or canned pinto beans
1/2 chopped onion
1 serrano or jalapeño (to taste)

FYI-Beware!! The tacos we made in the chicken video are very tempting
*Bring the pot to boil- Add potatoes- Continue cooking for 10 minutes- Strain and coat with oil to prevent sticking
*If you have flimsy soft corn tortillas- try frying before adding them to the casserole

Easy Mexican Ground Beef Casserole with Tortillas
RECIPE:
Layers of seasoned ground beef, corn tortillas, chiles, cheese, and corn make our Easy Mexican Ground Beef Casserole with Tortillas a winner any night of the week. It's easy to make ahead of time and big enough for leftovers or a party!
7 Layer Casserole
Not only is this 7 layer casserole affordable but it's quick and easy to make in a pinch. It's a dump-and-bake type of dinner with lots of flavorful components from the peppers and onions to the ground beef and bacon.
RECIPE AND INSTRUCTIONS HERE -
Ingredients
4 cups white rice cooked
16 oz canned corn or frozen
1 1/2 lbs ground beef seasoned and cooked
1 red bell pepper diced medium-small
1 green bell pepper diced medium-small
1 medium yellow onion diced medium-small
29 oz pasta sauce or tomato sauce/crushed tomatoes
2 1/2 cups shredded cheddar cheese or 3 cheese blend
1/2 lb bacon about 6 strips
Instructions
Preheat oven to 350F.
Assemble the casserole in a 13x9 baking dish in order of ingredients ending with bacon on top, which will slightly cover each other in layers.
Bake uncovered for 1 hour.
Slice and serve.
Notes
You can use pasta sauce (marinara), tomato sauce, or canned crushed tomatoes.
If you'd like a bit of spice, jalapenos would be a nice addition.
Substitute the ground beef with ground turkey or sausage and the bacon with turkey bacon if desired. For the beef, brown it thoroughly before adding to the casserole dish. Season it as you'd like while browning. Garlic powder, salt, and pepper are our go-to's.
