EASY 6 Ingredient Taco Casserole | The Recipe Rebel
This easy Taco Casserole recipe is made with just 6 ingredients and ready in 30 minutes! Make ahead and freezer friendly!
Ingredients
1 lb lean ground beef
1 red bell pepper
1-2 teaspoon taco seasoning (1 for mild, 2 for more kick)
1 1/4 cup jarred tomato salsa (mild or spicy, depending on your tastes)
5 large tortillas
2 cups shredded cheddar cheese
Instructions
In a large skillet, cook ground beef over medium-high heat until mostly browned.
Add pepper and continue cooking, stirring often, until pepper has softened and meat has browned completely.
Stir in taco seasoning and salsa, and pour into another bowl.
Place two large tortillas, one on top of the other, in the bottom of the same skillet (or you can layer it on a sheet pan if your tortillas don't fit). Top with 1/3 ground beef mixture and 1/2 cup cheese.
Repeat layers: one tortilla, 1/3 ground beef, 1/2 cup cheese, one tortilla, last 1/3 ground beef, 1/2 cup cheese, one tortilla.
On top of the last tortilla, sprinkle the remaining cheese. Cover and cook on low until warmed through and cheese is melted, 4-5 minutes, or pop in the oven at 350 degrees F for 10 minutes if using an oven safe skillet.
Slice and serve.

How to make 7 Layer Casserole!
7 Layer Casserole is a comforting casserole perfect for a busy family. It has layers of rice, corn, onion, bacon and more! It was one of my favorite casseroles growing up and your family is going to love it too!
RECIPE HERE --
Ingredients
1 c. long grain white rice uncooked
1 can whole kernel golden sweet corn 15.25 oz
2 cans tomato sauce 8 oz each, divided
3/4 c. water
½ c. chopped yellow onion
½ c. chopped green bell pepper
1 lb ground beef
½ tsp salt
¼ tsp ground black pepper
4-5 strips bacon
Instructions
Put the rice in a 2-quart greased baking dish.
Spoon the corn evenly over the rice layer.
Combine one 1 can of tomato sauce with 1/2 c. of water and pour over the corn layer.
Sprinkle with the chopped onion and bell pepper.
Next put the raw ground beef and sprinkle lightly with the salt and freshly ground black pepper.
Mix other can of tomato sauce with ¼ c. of water and pour over ground beef.
Top with the strips of bacon.
Cover tightly with foil and bake at 350 F for 1 hour.
Uncover and cook 30 minutes longer.

1 lb 80/20 ground beef
1 lb 97/7 ground beef
2 jalapenos
1 diced onion
1/2 tsp beef bouillon
1/2 cup water
All-Purpose Seasoning
1 tsp each (sazon, chile powder, cumin, smoked paprika, italian seasoning)
16 oz refried beans
2 cups colby jack cheese
2 cups sour cream
zest and juice of 1 lime
1/2 tsp sugar
1 cup crushed doritos
1/4 cup sliced black olives
1/4 cup diced cilantro
1/2 cup diced tomatoes

I love serving a simple cold salad with this casserole, but you can also just enjoy it alone if you wish, or you can add your favorite vegetable to this casserole as a substitute. 1 C. Chopped onions
1/4 C. Chopped green onions
1/2 C. Diced green bell pepper
1/2 C. Diced orange bell pepper
1 med/large diced tomato
3 med/large minced garlic cloves
2-2 1/2 tsp Seasoning Salt
3 Tbs All Purpose Flour
3/4 C. Beef broth
Tomato slices to top (i used 4 slices)
Pepper as needed
2 Large Russet potatoes (cut in half long way then sliced)
3 Tbsp cooking oil of your choice (to fry potatoes)
6 oz. Freshly grated Mozzarella Cheese or as needed
6 oz. Freshly grated white Sharp Cheddar Cheese or as needed
*BAKE 350 for 35-40 minutes…cover with foil if you wish so tomato doesn’t get mushy.

4 to 5 Roasted Poblano Peppers
1 1/2 cups freshly shredded mozzarella cheese (your choice of cheese)
2 Potatoes sliced potatoes
2 cups Creamy refined beans
Savory sauce (Ingredients listed below)
2 cups shredded chicken (I used 1 large chicken breast that looked more like 2 ????)
3 to 4 Corn tortillas
Tomato Savory Broth
2 Cups Water
1 can (7Oz.) diced Hatch roasted chilis
1/4 - 1/2 Onion
3 Chopped Tomatoes (1 ripe vine tomato and 2 Roma)
2-4 Garlic Cloves
1 Tbs Bouillon (If more is needed start with 1/4 Teaspoon extra at a time)
1/2 Tbsp Mexican Oregano
1-2 Tbsp Oil
Cilantro to taste (8-10 stems)
1/4 cup Tomato Sauce (Optional)
Creamy beans
Oil
1/4 cup water or bean broth
2 Cups pre-cooked or canned pinto beans
1/2 chopped onion
1 serrano or jalapeño (to taste)

*Bring the pot to boil- Add potatoes- Continue cooking for 10 minutes- Strain and coat with oil to prevent sticking
*If you have flimsy soft corn tortillas- try frying before adding them to the casserole
