How To make Corn Muffins (Samuel)
2 c Corn flour or cornmeal
- (yellow or blue) 1 c Whole wheat pastry flour
6 oz Soft tofu
3 c Water
1/2 ts Salt (sea salt in book)
Mix flours. Crumble tofu into blender. Add boiled water and salt to tofu in blender (carefully) and blend until not quite smooth. (Just a few pulses please). Dont do this in too small blender or without lid like I did once. The goal is muffins, not 2nd degree burns. Add immediately to flour and mix well. Spoon into muffin tins or cast iron stick trays and bake at 400 degrees for about 1/2 hour until golden brown. She suggests you heat oven first and place oiled muffin tins in to heat up beforehand to get a "wonderful crust". Please note, I have to oil the tins because I don't use teflon products around by birds, but this might work also.....This is not sweet bread, I serve corn potato chowder with it. palenta (8 kašika)
kukuruzno brašno (2 kašike)

Priprema:
U jednu zdjelu prvo umutite dvoje jaja. U jaja dodajte palentu i kukuruzno brašno, i dobro promiješajte da se sjedine sa jajima. Zatim dodajte jogurt i promiješajte. A nakon toga brašno i prašak za pecivo. Dobro izmiješati pazeći da vam ne ostanu grudvice. Dodajte griz i ulje. Smjesu dobro izmiješati pazeći da vam ulje ne ostane na površini. Dodajte mladi sir i feta sir i sjedinite smjesu. Na kraju, malo soli. Sipajte smjesu u silikonske ili papirne kalupe tako da u svakoj bude podjednako. Ukoliko nemate kalupe, onda prethodno nauljite pleh za mafine kako vam se ne bi zalijepili. Mafine pospite susamom. Pecite u prethodno zagrijanoj pećnici na 180 stepeni 15-20 minuta.

Ingredients:
polenta (8 tbsp)
corn flour (2 tbsp)

semolina (2 tbsp)

young cheese (200g)
feta cheese (150g)
yogurt (200ml)

Preparation:
First, beat two eggs in a bowl. Add the polenta and cornmeal to the eggs, and mix well to combine with the eggs. Then add yogurt and mix. And then flour and baking powder. Mix well, taking care not to leave lumps. Add semolina and oil. Mix the mixture well, making sure that the oil does not remain on the surface. Add young cheese and feta cheese and combine the mixture. Finally, a little salt. Pour the mixture into silicone or paper molds to equalize each. If you don't have molds, then oil the muffin tin beforehand so they don't stick to you. Sprinkle the muffins with sesame seeds. Bake in a preheated oven at 180 degrees for 15-20 minutes.
Cheesy Spicy Beer Corn Muffins Recipe
Biscuit Baking Mix:
1 cup = 1 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon shortening
Recipe:
1 cup regular domestic beer
3 cup biscuit baking mix
1 cup yellow cornmeal
1 teaspoon baking powder
1 teaspoon cayenne pepper
2 eggs, beaten
1 cup shredded sharp Cheddar cheese
Pre heat oven at 325 degrees.
Let beer stand until there is no foam.
Mix biscuit mix, cornmeal, baking powder and cayenne pepper.
Add eggs and beer, mix well.
Add cheese, mix well.
Fill muffin pan 2/3 full.
Bake for 20 minutes.
Cool for 10 minutes.
Makes 12 - 15 muffins.

Dilly Corn Muffins made with Dill Pickle Relish
Try this way to jazz up your cheesy corn muffins. By using the Krusteaz corn muffin mix as directed on the package, I added a small jar of dill pickle relish and some cheese. I can't describe how the flavors blended together to make the most delicious corn muffin! I imagined eating them with greens and beans or chili or a favorite soup. You should really try this recipe!
